Cottage Pudding with Vanilla Sauce

If you a regular reader of my blog, you might have noticed that am posting some delicious American desserts as i picked 'Do either US states sweets or Indian states sweets' as theme for this week's blogging marathon. After some dangerously addictive Carnival funnel cake, am posting an another lipsmacking traditional American dessert. If you are looking for a different pudding, then you have to give a try to this fantastic American pudding. This pudding calls for a plain, dense cake served with a sauce or a sweet glaze.  Usually the glaze is prepared with cornstarch and flavored with sugar, vanilla,chocolate or else with a variety of fruit flavors like strawberry, lemon etc.

When i picked Cottage pudding from Wikipedia page under American desserts, i went on googling for the recipe which pulled me to give a try to this fantastic dessert. Actually for me pudding goes for rich, dairy baseed desserts but this cottage pudding is completely different. A cake batter is prepared with easy ingredients, once baked in a square pan, they are sliced a small squares. Then this piece of pudding is topped with vanilla sauce to serve as a dessert. Quite a different one rite. Cottage pudding have its origin in North America as well. And this recipe is published during 1863 or 1864 in Godey's lady's book, a popular 19th century women's magazine. Later many versions of this pudding do exists, however i went with a simple vanilla sauce to serve along with this cottage pudding.

Vanill sauce drizzled cottage pudding, Cottage pudding

1+1/2cup All purpose flour
2/3cup Sugar
1/4cup Butter
1 Egg
2tsp Baking powder
1tsp Vanilla extract
1/2tsp Salt
1/2cup Milk

Beat the butter and sugar until they turns creamy, add in the egg and beat for a while.

Meanwhile sift the flour,baking powder, salt together, keep aside.

Add the dry ingredients, milk, and mix well. The cake batter will be bit heavy.

Pour the cake batter to a greased square baking pan and bake for 30-35minutes until a skewer inserted comes out clean

Cottage Pudding, Cottage pudding with vanilla sauce

Vanilla sauce:
1/2cup Butter
3/4cup Sugar
2tsp Cornstarch
1cup Water
1tbsp Vanilla

Take the butter,sugar, corn starch,water in a pan, cook until this mixture turns thick.

Add the vanilla, cool it and drizzle over the cottage pudding.
