Mushroom Biriyani with Coconut Milk

Sunday lunch is always special and i make mostly biriyani for our lunch, though this one pot meal asks for grinding masalas and chopping vegetables i just love enjoy making this flavourful rice. Mushrooms have many more health benefits which include relief from high cholesterol levels, breast cancer, prostate cancer and diabetes. Its also helps very much in weight loss and increases your immune system.Mushrooms are good source of iron and not to forget that mushrooms are ideal for diabetic peoples as they have no fats,no cholesterol, high protein content and with loads of vitamins,minerals. They also contains lot of water and fiber.We are mushroom lovers, anything with mushroom is my hubby's favourite,he was super happy when i dished out this biriyani with mushrooms which is completely cooked in spiced and flavoured coconut milk.

Mushroom Biriyani, Mushroom Biryani

Am running my first week of blogging marathon with an interesting theme called Cook with coconut. Needless to say that this ultimate mushroom biriyani is completely cooked with coconut milk. If you are a follower of my blog, i love to cook biriyanis with coconut milk rather than cooking with yogurt. Trust me this mushroom briyani tastes absolutely fabulous as it is spiced with a wonderful array of flavourful spices and homemade freshly squeezed coconut milk. If you love mushrooms and biriyani, then this one pot meal is definitely a treat for you.

Mushroom biryani, mushroom one pot meal

2cups Basmati rice
2cups Chopped button mushrooms
2nos Onions (sliced thinly)
5nos Tomatoes (chopped finely)
1tbsp Ginger garlic paste
2nos Green chillies (slit opened)
1tsp Red chilly powder
1/4tsp Turmeric powder
1tsp Garam masala powder
2cups Coconut milk
1cup Water
1/2cup Mint leaves (chopped)
2tbsp Ghee
Salt
Oil
2nos Whole spices (bay leaves,cloves, cinnamon stick & cardamoms)

Heat the oil and ghee together in a pressure cooker, fry the bayleaves, cloves,cinnamon stick and cardamom until they turns brown.

Add immediately the sliced onions,chopped tomatoes, slit opened green chillies,ginger garlic paste and sauté with salt until the veggies get cooked and raw smell goes away.

Meanwhile wash the rice and soak the rice with coconut milk and water,keep aside for 15minutes..

Add the chopped mushrooms,red chilly powder, turmeric powder,garam masala,cumin powder to the cooking veggies, cook for few minutes.

Drain the soaked rice and add the rice soaked coconut milk-water,mint leaves to the cooker,bring everything to boil.

Finally add the soaked rice,cook in high flame,close the cooker.

Cook upto three whistles,put off the stove. Once the steam gets released, give a stir gently.

Serve hot with onion raita or else with a spicy side dish.

Even I make biryani almost every weekends. Love the color of the biryani and must have tasted rich with addition of coconut milk. Your side dish is also very tempting :)
