Manchurian is an excellent starter or side dish to have with fried rice or with a bowl of cooked rice. I have been dishing out many varieties of manchurian and one of my recent trial is with Eggplants. I followed the same cooking way as much as we do with chicken or else vegetables. Eggplant manchurian makes an excellent starter to start a party with, i have made a dry version if you want a saucy style of manchurian you can still dish this eggplant manchurian as much as gravy style dish. Trust me this Eggplant manchurian is definitely a delicacy which is a must to try at home. And this is just prefect to dish out in less than 30 minutes. Its a restaurant style vegan manchurian which is a must to try. And this dish calls for easily available ingredients which is quite easy to find in your pantry.

Date & Chocolate Chunks Tray Cake
We are having a week of fall season holidays here, obviously i have to plan everything for a week to bake or cook for my blog baby. Trust me, all my plans went as much as good and i have baked couple of cakes, cookies and breads during my stay at home. Needless to say,my family members were enjoying all the bakes i have baked out for their snacks to desserts. Nothing can beat the freshly baked homemade cakes & bakes rite. Usually i bake only during weekends, coz of my busy professional life. Rite now its fall season here, you might know how the day light will be. Once we enter the home, i dont feel like baking or cooking as the weather makes me lazy and tired. But a week of holidays is definitely worth and fruitful as a blogger. Kids enjoyed their mom's bakes without any fuss,we keep ourself away from the store bought cookies or breads since a week. One among those bakes is this tray cake, this cake calls for finely chopped dates, homemade dates syrup, roughly chopped chocolate chunks as main ingredients along with usual ingredients we usually goes for making a cake. This cake is butterless, sugarless but not eggless.

Chia Seeds & Banana Spelt Flour Muffins
If you are looking for a prefect baked treat to finish your over ripen bananas, you have to look at my today's post. This muffins makes an excellent breakfast muffin or a after meal dessert or else an evening snack to enjoy with a cup of coffee. These muffins are completely butter free, yes i skipped butter. Trust me these muffins came out extremely spongy with bit dense because of Spelt flour. However you wont miss the sponginess in this muffins. Banana and chia seeds both together works absolutely incredible for baking out this easy breezy muffins. If you dont have spelt flour, dont worry, just replace it completely with Whole wheat flour. I have been experimenting to bake out some simple baking treats with Spelt flour and trust me i have been enjoying completely to bake some incredible bakes with it. And chia seeds have its own place in my pantry as well. Though we love chia seeds in pudding, my kids enjoy and love chia seeds in muffins and in quick breads.

Black-eyed Peas Dumpling in Tangy Gravy/Kaaramani Urundai Kuzhambu
Black-eyed peas, which i fondly call as Kaaramani is one of the protein rich legumes aka beans which have loads of nutritious content in it. Do you know just a cup of Black eyed peas have 20% of daily value of magnesium, calcium and iron. Yes if you are vegetarian, dont forget to add this beans quite often in your diet. Also a cup of cooked black-eyed peas have 160 calories with interesting fiber in it. Black eyed peas is one of my most favourite legumes after Red kidney beans,obviously my pantry will always have this. South Indians makes a lipsmacking tangy dish with steamed dal dumplings dunked in a spicy tamarind gravy. Its quite a popular dish and we call it as Paruppu urundai kuzhambu. Highly rich in protein, this dish is often prepared at home whenever we feel like having something tangy and protein rich food for our meal. Since i want to give a twist to the usual Paruppu Urundai kuzhambu, i replaced the toordal dumplings with steam cooked black-eyed peas dumplings.. Trust me this dish is just prefect to enjoy with hot steaming rice and papads.

Almond Chia Seeds Breakfast Smoothie
Breakfast smoothie, this smoothie is quite enough to fill some hungry tummy easily with less efforts. Actually am not a breakfast person earlier, i usually skip them but now am very much strict towards me to have atleast a slice of bread with a cup of coffee or tea before leaving. And this works,am skipping that mid morning snacking habits which helps a lot for not skipping my lunch. Yes i love snacking and now having breakfast in morning is literally keeping me away from it. If i dont feel like having a bread slice, i will whisk some smoothie to fill my tummy. And this works even for my kids. Obviously i do prepare varieties of smoothies early in the morning to finish our breakfast in time.One of my recent trial with breakfast smoothie is this Almonds, chia seeds smoothie.
