Potato, this vegetable is our family favourite, anything cooked with potatoes tastes always fabulous. Obviously my vegetable basket will always have this versatile vegetable. When i picked Bhurji recipes as theme for this week's blogging marathon,the first recipe came to mind is to prepare a bhurji dish with potatoes. Obviously anything cooked with potatoes doesnt go wrong and trust me this Aloo Anda bhurji was our family favourite from the day i prepared this Indian version of scrambles Eggs with finely chopped potato cubes.
This interesting bhurji works awesome as side dish for rotis. You can make many interesting lunch box dishes like Potato Egg Bhurji wraps to pack especially your kid's lunch box. Just drop some bhurji inside a cooked roti, roll it tightly and serve as a wrap, trust me everybody at home will definitely asks for a second serving. If you are preparing this Potato Egg Bhurji, be generous and make it in huge quantity. With usual spices and simple ingredients, you can dish out this incredible bhurji within less time.
3nos Potatoes (large & cubed thinly)
2nos Onions (large & chopped finely)
1tsp Ginger garlic paste
2nos Green chillies (chopped)
1/2tsp Red chilly powder
1/2tsp Garam masala powder
2nos Eggs
Few chopped coriander leaves
1/2tsp Fennel seeds (crushed)
Salt
Oil
Heat enough oil in a pan, fry the crushed fennel seeds, add immediately the chopped onions,chopped green chillies and ginger garlic paste,saute until the raw smell goes away..
Add the cubed potatoes,salt,red chilly powder and garam masala powder,cook everything in simmer.
Cook until the potatoes gets well cooked.
Meanwhile beat the eggs, add the beatened eggs to the spiced cooked potatoes.
Cook well until everything gets well cooked.
Finally add the chopped coriander leaves and put off the stove.
