Last but not least, my today's recipe goes for our family favourite vegetable aka carrots. Carrot have high vitamin A content which comes from beta-carotene which is very much good for our liver.Eating more deep orange coloured vegetables and fruits are always associated with lower risk of coronary heart diseases, obvious carrots helps a lot for lower risk of heart disease. Carrots eaten raw are excellent for the health, but many research says that cooking them also help to boost their nutritional content. My kids enjoyed thoroughly this healthy and simple egg bhurji prepared with finely chopped carrots. Served along with rice and rasam this egg bhurji tastes absolutely delicious and we just loved it having this ultimate healthy bhurji.
Am running this week's blogging marathon with Bhurji recipes as this week's theme, after posting healthy and delicious bhurji dishes with broccoli, potato, my today's recipe goes for carrots.This dish gets ready very quickly with a mild masala, yes i cooked this chopped carrots with ginger garlic paste, garam masala powder along with chopped green chillies. Trust me you will completely fallen in love with this healthy carrot egg bhurji.
4nos Carrots (large & chopped thinly)
1tsp Ginger garlic paste
3nos Green chillies (chopped)
1/2tsp Garam masala powder
2nos Eggs
Few chopped coriander leaves
1/2tsp Mustard seeds
1/2tsp Cumin seeds
Few curry leaves
Salt
Oil
Heat enough oil in a pan, let splutters the mustard seeds, cumin seeds and curry leave.
Add immediately the chopped green chillies and ginger garlic paste,saute until the raw smell goes away..
Add the chopped carrots,salt,and garam masala powder,cook everything in simmer.
Cook until the carrots gets well cooked.
Meanwhile beat the eggs, add the beatened eggs to the spiced cooked carrots.
Cook well until everything gets well cooked and put off the stove.
Serve hot with rice.
