Bhurji makes an excellent side dish to relish along with rice or rotis, you can still enjoy them as filling inside two bread slices for making a healthy sandwich or else to roll and have like a wrap with a tortilla or Indian roti. You have numerous choice to enjoy this excellent dish as they asks very less efforts to get ready. If i feel lazy or dont have much time to cook a dish, i simply go with a spiced scrambled egg aka egg bhurji to enjoy with some rice.They are seriously very easy to dish out. Though we love egg bhurji, its quite interesting to add vegetables to make them more healthy na. Personally i felt that adding more vegetables while making burji is one of the best way to sneak vegetables. You can feed anyone's easily with those vegetable loaded bhurjis.
My today's recipe goes for the super healthy, antioxidant rich broccoli, one of the most versatile vegetable. Kids are not great fan of this vegetable eventhough they have loads of healthy stuffs in them. Instead of making soups,salads or steamed dishes out of this broccoli, give a try to this Broccoli egg bhurji and see how fast your kids will finish their meal. My kids enjoyed thoroughly and i was super happy when my younger one asked to prepare this burji often for his lunch. Whatelse a mom need. 2cups Broccoli florets (chopped finely)
2nos Eggs
1/4tsp Turmeric powder
1/2tsp Pepper powder
1/2tsp Garam masala powder
1no Onion (chopped finely)
1no Tomato (chopped)
1tsp Ginger (minced)
2tbsp Coriander leaves (chopped)
2nos Green chillies (chopped)
Salt
Oil
Heat oil and fry the chopped onions and minced ginger until the onions turns transculent, add the chopped tomatoes to the cooking onions and saute for a while.
Add the chopped broccoli florets and saute for a while.
Now add garam masala powder, coriander leaves, chopped green chillies, pepper powder and salt to broccoli anf cook in simmer.
Meanwhile whisk the eggs with turmeric powder.
Add this egg mixture to the veggies and stir until the eggs get well cooked..
Serve hot with bread, rotis or chappathis.
