Am gonna share three different tortilla based dishes this week, tortillas are the flatbreads made from either all purpose flour/wheat flour or else with corn.These soft breads are easy to make and they are almost rolled like Indian rotis. I love to make tortillas as at home as they go for simple ingredients. Flour, baking powder,salt and butter or shortening is quite enough to roll out homemade tortillas, this time i prepared mine at home from scratch, i have already posted how to make homemade flour tortillas here. We love Mexican foods very much after Thai and Moroccan. Whenever i feel like making Mexican dishes at home, everyone at home will definitely ask for quesadillas, if you check my space, you may notice that i have already tried couple of quesadillas.
But this time i tried my hands to recreate the famous Deep fried Burritos aka chimichanga at home.This dish is quite famous in South Western US cuisine and in some Mexican states, actually this dish is prepared by filling a tortilla with many ingredients especially with Mexican rice and topped with cheese, chicken, beans etc. Not to forget that chimichanga are usually deepfried, but many healthy versions do exists, you can either shallow fry, pan fry, bake it or deep fry them according to your wish. I prepared these gorgeous looking chimichanga with healthy refried beans and cheese and topped them with a simple tomato sauce and cheese. This dish makes an excellent filling meal.These chimichangas are going to be a part of this week's blogging marathon and the theme of this week is Tortilla based dishes.
2cups Refried Beans
5-6 Flour Tortillas
Grated cheese (as per need)
Mexican Tomato sauce:
1 small can Peeled tomatoes
1no Onion (chopped)
2nos Garlic cloves (minced)
Few Jalapeno peppers
Salt
Oil
Heat enough oil in a pan,put the chopped onions into the pan and sauté them until they are transparent, Add the jalapeno pepper and continue to cook for 5 minutes.
Add the minced garlic and sauté for a minute.
Pour the canned tomatoes into the pan and mix well. Continue to cook for about 10-15 minutes until the tomatoes gets cooked.
Assembling:
Drop enough refried beans over a tortillas, top it with cheese, and roll the tortillas as like spring rolls.
Heat oil for pan frying, once the oil is heat, fry the rolled tortillas until they turns crispy.
Remove and drain the excess of oil.
Serve immediately, topped with Mexican tomato sauce and cheese.
Enjoy for a lunch served along with guacamole.
