Since ever i tried cakes with ricotta cheese, i got hooked to this cheese and couldnt stop myself to give a try to this wonderful looking eggless cake..This cake tastes absolutely divine when served with a cup of tea for an evening snacks that too when its cold outside..You can also start ur day with this super spongy cake with a bowl of warm milk for a quick breakfast,seriously you can have a super filling breakfast, as i used Cinnamon & grated applesauce along with ricotta cheese, needless to say the aroma of the cinnamon enhance the flavour of this cake..I baked 6 mini loaves and they vanished very easily and quickly..My teddies enjoyed having this super moist apple cake..Sending to Srivalli's Snacks Mela, Vardhini's Bake Fest and to CEDD-Apples guest hosted by Nayna,event by Raven..
2cups All purpose flour
1cup Sugar
1/2cup Ricotta cheese
1cup Cinnamon & grated applesauce
1/2cup Oil
1/4cup Yogurt
1tsp Baking powder
1tsp Baking soda
1/2cup Apples (sliced thinly)
Preheat the oven to 350F..Mix together the flour,baking powder and baking soda,keep aside..In an another bowl, beat together the sugar,ricotta cheese,oil,yogurt until the sugar gets well mixed, now add the cinnamon and grated applesauce, give a quick mix, add gradually the dry ingredients and mix gently,dont overmix..
Pour the batter to the greased mould, drop gently the sliced apples and pull them gently into the batter..Bake for 20-25minutes,until a skewer inserted comes out clean..
Enjoy warm with a cup of coffee or tea..
