Homemade Crumpets/Crumpets

A crumpet is a griddle cake and these cakes makes an excellent breakfast or snacks depends upon how its served. This English crumpets are generally round in shaped and their shape is obtained by pouring the yeasted batter by a shallow ring in a pan/griddle. This cakes have their characteristic flat top with many small pores, with a chewy and spongy texture. They are cooked in simmer and served immediately to serve warm. These cakes can be cooked slightly undercooked and toasted later to enjoy for breakfast. Often served with butter, you can enjoy thoroughly this spongy crumpets with jam, honey, spread like nutella, caramel etc.English muffins and Crumpets are two different griddle cakes, though they are both round with spongy texture. However crumpets are served whole with butter and jam while English muffins are splited before serving.

Iranian Barbari Bread/Noon Barbari/Naan-e-Barbari

Barbari bread is a type of flat bread which is quite popular in Iran and its neighbouring Armenia. Barbari means our fathers or else related to Barbars in Persian language. Barbars are a group of people who lives in Eastern borders of Iran. Obviously not need to explain that this bread comes from this group.Coming to this Bread, its often eaten with cheese with herbs, jam, or else simply with a cup of tea for breakfast. Its almost like our Indian Naan bread, and this bread is also known as Naan-E-Barbari or else Noon Barbari. However Persian also makes this bread as much as like Iranian. This bread is usually shaped as a longish oval and this bread calls for roomal, a flour paste prepared using flour and baking soda. This flour paste helps a lot to stretch the yeasted dough and this paste is also used to spread over the bread to give a deep brown colour after baking.

Gai Mei Bao - Chinese Coconut Buns/Cocktail Buns

Cocktail buns aka Chinese Coconut buns has its origins in Hong Kong which is a sweet bun, filled with a buttery, milky sweet coconut paste. This bun was created some time in the 1950's in Hong Kong, when the owners of a local bakery were left with quite a few unsold but perfectly good buns. Then the owners  ground them up with sugar to make a filling which was put into freshly baked buns the next day. While the original buns were made with filling made only from left over buns and sugar, some more creative bakers eventually added more flavour to the new buns by adding coconut, butter and milk to the filling. This has now become the accepted filling for these Chinese Cocktail/ Coconut Buns.

Needless to say that baking is quite a stress burster, my today's post is Broa aka Portuguese corn bread, this bread is traditionally made in Portugal and in Brazil (where it is traditionally seasoned with fennel). Eggless Irish Bambrack/Speckled Bread - Irish Halloween Fruit Bread

Barmbrack/Speckled Bread/Irish Halloween fruit bread is often served toasted with butter along with a cup of tea in the afternoon. The dough of this bread is sweeter than sandwich bread, but not as rich as cake, and the sultanas and raisins add flavour and texture to the final product. In Ireland it is sometimes called Bairín Breac, from the Irish word bairín - a loaf - and breac - speckled due to the raisins in it, hence it means a speckled loaf.

When i check wikipedia to know more about this bread, i was totally amazed to read the tradition of this halloween bread. Here is wat Wikipedia says about this Halloween Brack , this bread traditionally have various objects baked into the bread and was used as a sort of fortune-telling game. In the barmbrack , there might have a pea, a stick, a piece of cloth, a small coin and a ring. Each item, when received in the slice, was supposed to carry a meaning to the person concerne. If its a pea, the person would not marry that year; the stick, would have an unhappy marriage or continually be in disputes; the cloth or rag, would have bad luck or be poor; the coin, would enjoy good fortune or be rich; and the ring, would be wed within the year. Other articles added to the brack include a medallion, usually of the Virgin Mary to symbolise going into the priesthood or to the Nuns, although this tradition is not widely continued in the present day. Thank god, else imagine the disaster after having this bread.

Yeasted Eggless Banana Sandwich Bread

Its been a while i baked a bread at home, summer vacation and few more personnal stuffs kept me away from baking. After two month's break to few baking events finally am kick starting my baking. Usually we make banana bread as quick bread using baking powder but today's bread goes for yeast. Actually this bread tastes mildly sweet and you can make excellent peanut butter sandwich and not to forget you can make fabulous french toast too. If you dont have sweet tooth, you can still make savoury sandwiches with different savoury stuffing or else serve this bread simply with different curries or gravies.I prepared this sandwich bread simply with bananas, you have numerous choice to flavor this bread with different fruits, or else with different spices like cardamom, cinnamon etc. To make this sandwich bread more interesting, you can still add chocolate chips, nuts and many more spreads or syrups like caramel, nutella etc.

Eggless Kimmelweck/Kummelweck Rolls

Kummelweck rolls are simple rolls , but they may sounds special and different as this simple rolls are topped with sea salt and caraway seeds. These rolls are great for sandwiches and even for making burgers.Do you know what exactly is a Kimmelweck Roll? It's a hard roll, much like a crusty Kaiser roll, but sprinkled with caraway and coarse salt instead of poppy seeds. They are German in origin and the word “Kummel” means caraway seeds while “Weck” means roll. In Buffalo in New York, these rolls are used to make a speciality sandwich called the "Beef on Weck", with thinly sliced rare roast beef and horseradish and it is typically served with fries and a dill pickle.

Pane Siciliano - A Sicilian Sesame seeded Semolina Bread

Needless to say am a foodie, everytime i join a group or a baking challenge i will immediately make the challenge without any delay. This is the first time i delayed baking this Pane Siciliano due to some personnel stuffs. However this Pane siliciano needs atleast two days as you need to make Cresciuta aka the famous Biga. What is unusual about this bread is that it is baked with semolina ( what we know in India as rava/ sooji). In Sicily (and Italy), the semolina they use for this bread is a specific grind of durum wheat called “semola di grano duro rimacinato” or just “rimacinato”, which translates as 'ground again'. This refers to semolina which is ground once more to break the coarser grain into finer flour.

Eggless Sheermal/Shirmal - Saffron Flavoured Flatbread

As per wiki ,Sheermal or Shirmal, is a saffron-flavored traditional flatbread made in Iran, Bangladesh, Pakistan, Lucknow region and Hyderabad, India, probably from Persian influences. It is one of the several rare Lucknow and Hyderabadi delicacies in India. It is also part of the Awadhi cuisine and is enjoyed in Old Bhopal, especially with meat delicacies. Sheermal is a mildly sweet naan made out of maida, leavened with yeast, baked in a tandoor or oven. Sheermal was traditionally made like roti. Today, sheermal is prepared like naan. The warm water in the recipe for roti was replaced with warm milk sweetened with sugar and flavored with saffron. The final product ressembles as much as like Danish pastry.Sheermal is sometimes served with Lucknow kababs or alongside nihari. The name of this bread comes from the Persian word for milk which is called 'Sheer'. Some decorates sheermal with a lovely rustic pattern while Lucknowi sheermal garnished with raisins and others garnish with silvered almnds, poppyseeds or simply with sesame seeds for the topping.Sheermal can be eaten with tea for breakfast and a part of a meal with non vegetarian curries like Nihari and vegetarian curries like Kurma.

Coca de Venduras/Coca Vegetable/Vegan Catalan Style Vegetable Pizza

Pizza, this word itself makes my kids happy, they just love to have pizzas everyday, but since i dont like to feed often my kids with these cheesy super rich Italian dish, i'll try myself to make them at home with healthy stuffs in it. Sometimes i'll make wheat based pizza crust or else i'll go for mixed millets pizza crust as well. Also i'll try to add grated veggies in my homemade pizza based crust. However i'll find all the way to add healthy stuffs in my homemade pizzas. Pizzas makes an excellent meal if they are prepared in a healthy way. If you have an opportunity to make a pizza without cheese, how can i miss it. When googling, the name coca pulled me to go through the recipe and got to know more about this Spanish aka Catalan style of tart aka pizza which goes for a yeasted thin crust topped with sauteed vegetables without cheese.

Vegan Russian Braided Bread with Pesto Filling

I love pestos, obviously i make varieties of pestos at home.Bread with pesto filling definitely goes directly to our favourite bread list, i tried my hands in making this Russian braided bread for this month's We Knead To Bake, a monthly baking event by Aparna of My Diverse Kitchen. As Aparna asked us to chose any stuffed bread with a savory filling, actually she said to make a different shaped bread, immediately i checked my bookmarked recipes and baked this green gorgeous looking pesto braided bread. This bread is definitely a keeper, very easy to shape. This bread can be enjoyed thoroughly just like that or simply along with a bowl of warm soup to have filling and satisfying dinner. Pesto filling is used in this bread is Coriander, cashew pesto. This pesto gives any excellent flavor to this vegan bread which is dangerously addictive. One cant just stop with a slice.

Gibassier - A French Anise & Orange Flavored Loaf

Gibassier is a French loaf which makes an excellent bread for breakfast, this bread is prepared with candied orange, orange blossom water and aniseed which is later topped with plain or vanilla sugar. Gibassier is baked during christmas season when orange is found abundantly, some old French stories says that earlier during xmas, orange is given as a gift from Santa to poor childrens. When you check for Xmas special French bakes most of the breads or cakes have this citrus fruit in it. Gibassier is also named as large cookie from Lourmarin as they looks like oval shaped leaves.Gibassier sounds as much as like Italian Panettone, and its believed that it must apparently be torn apart with the hands when served to bring good luck in the New year.
