Rock Candy Sugar & Foxtail Millet Paal Kozhukattai/Kalkandu Thinai Paal Kozhukattai

Am going to post something interesting to dish out if you want to celebrate this year's Ganesh chathurthi aka Vinayagar chathurthi with a different Paal Kozhukattai. These mini dumplings dunked in milk sweetened with rock candy sugar is an interesting festive food to dish out. Yes you read it right, its a delicious delicacy to try with healthy ingredients in it. Actually i used rock candy sugar aka kalkandu instead of usual jaggery and sugar to sweeten this incredible dumplings. Since i dont want to make the usual rice flour dumpling i opted for the healthy millet grains aka the popular 'Foxtail Millet' which is known as Thinai in tamil. Paal Kozhukattai is well known in Chettinad cuisine of Tamilnadu region and its our family favourite as they suits prefectly to enjoy after a meal or else for snacks.

If you are in India, you are lucky to get some store bought Thinai maavu/foxtail millet flour, but unfortunately i dont get them, hence i prepared myself by grinding the whole foxtail millet. Once sieved, your flour is ready to dish out. After dry roasting the flour, you can get ready to make this wonderful paal kozhukattais.These kozhukattais can be served chilled or warm,eventhough i loved mine as mildly warm kozhukattais.Even its time consuming to prepare this mini dumplings, trust me its definitely worth to give a try to this healthy and delicious paal kozhukattais. Dont forget to dry roast well the foxtail millet flour until a nice aroma comes from, else you cant roll the balls out of the dough.

Thinai Kalkandu Paal Kozhukattai, Foxtail Millet Paal kozhukattai

1cup Foxtail millet flour/Thinai flour (roasted)
Salt (a pinch)
1tbsp Oil
3cups Milk
1/2cup Rock candy sugar/Kalkandu (adjust as per your taste)
1tsp Cardamom powder
1/4cup Grated coconut

Heat a cup of water with salt and oil.

Meanwhile take the well roasted foxtail millet in a large bowl,add gradually this hot water and knead the flour as a stiff dough.

Make small balls from this dough and keep aside..

Meanwhile bring to boil the milk and rock candy sugar together, add now the rolled balls to the boiling milk.

Put the flame in simmer and cook for 15-20 minutes.

Once the cooked balls starts floating,put off the flame and add the cardamom powder, grated coconut give a stir.

Serve warm or chilled as you desire.
