Eggless Pumpkin Marble Cake

I baked this eggless marble cake with ricotta cheese, pumpkin puree and  dark chocolate chunks few days back for our evening snacks just to finish up some leftover pumpkin puree.. Anything with chocolates are our family favourites, obviously i make bakes with chocolates quite often..This eggless marble cake goes for a quick preparation,quite a fabulous super delicious cake as i used yogurt,ricotta cheese and oil for making this cake instead of butter, definitely a beautiful cake to enjoy anytime of the day..They were super light,spongy and tremendously super moist coz of the pumpkin puree and ricotta cheese..We just loved having this cake when they were still warm, needless to say they vanished very much quickly and everyone at home just loved it..Sending to Vardhini's Bake Fest..


2cups All purpose flour
1cup Corn flour
2cups Sugar
1cup Ricotta cheese
1/4cup Pumpkin puree
1/2cup Yogurt
1cup Canola oil
150grms Dark chocolate bar
1tsp Baking powder
1tsp Baking soda

Mix together the all purpose flour,corn flour, baking powder and baking soda and keep aside..Beat the  sugar,ricotta  cheese, yogurt and oil  for a while..now add the flours , stir everything well and dont overmix..Meanwhile melt the chocolate bar with enough water in microwave oven for 4minutes, divide the already prepared batter in two bowls,  add the pumpkin puree in a bowl and mix it while in another bowl add the melted chocolate and mix it..

Preheat the oven to 350F..Greased the mould, pour the pumpkin puree batter first, then pour the chocolate batter, with a skewer make some swirls through the batter to marbleize it..Bake for 25-30minutes in middle rack or until a toothpick inserted in the centre comes out clean..keep aside and let them cool..

Serve warm or at room temperature..
