Usually i used to prepare paruppu usili either with channadal,toordal or with yellow split moong dal or else a combination of these three dals, for a change today for our lunch i tried this delicious paruppu usili with whole green moongdal with carrots, this paruppu usili turned out super delicious,full of protiens,,easy to prepare and nutritious...Everyone at home enjoyed this healthy paruppu usili with rasam and curd rice, definitely a fabulous pair even for rotis..Obviously this paruppu usili goes to my own event CWS-Moong/Mung Beans..
2cups Carrots (chopped)
1no Onion (chopped)
1/4tsp Mustard seeds+Urad dal
2nos Green chillies(slit opened)
3nos Curry leaves
2tbsp Grated coconut
Salt
Oil
For Usili:
1cup Whole green moongdal (soaked overnite)
2nos Red chillies
1no Garlic cloves
1pinch Asafoetida powder
Take the dals with red chillies,garlic cloves with salt, asafoetida powder in a mixer, grind them coarsely...dont grind them as smooth paste, in a steamer without whistle, steam the grounded mixture from about 10 minutes, once cooled , crumble it well with your hands..
Heat enough oil in a pan, add the mustard seeds, urad dal..let them crack, add the chopped onion and slit opened green chillies and curry leaves, saute until the onion turns transculant, add the chopped carrots, saute for few minutes in simmer with enough salt, cooked in simmer with lid closed, add the scrambled dal to the cooked carrots and cook everything in medium high flame for 5 minutes, finally add the grated coconut and toss gently..
Serve hot as side dish for any rice dishes!!

I have to admit that south of India has such a wide range of cuisine, every time I go through your blog I find new ways of cooking new recipes with so the same old ingredients.
