Eggless Orange PoppySeeds Muffins

I enjoyed yesterday World Cup cricket match live through net and had a wonderful time with my FB friends while watching the most thrilling and wonderful final match, as most of us know that we Indians are champions....We guys are truly excited and i wasnt able to forget the last few minutes, yep incredible moments...I wanted to celebrate this victory as my way by making some super spongy and beautiful orange poppyseeds muffins as eggless version...This eggless orange muffins tastes super marvellous with a cup of tea for snacks or for a quick breakfast along with some cereals or a cup of chocolate, the choice is urs..Sending to Divya's Show Me Your Muffin & Srivalli's Breakfast Mela..

Eggless Orange Poppy Seeds Muffins

2cups All purpose flour
1/2cup Sugar
1/4cup Butter
1/4cup Sunflower oil
1/2cup Buttermilk
1/2cup Orange juice
1tsp Orange zest
1tsp Baking powder
1/2tsp Baking soda
1tsp Vanilla extract
2tsp Poppy seeds

Preheat the oven to 350F..Sieve the flour with baking soda and baking powder,add the poppy seeds and keep aside...Beat the sugar,butter and oil until the sugar gets well dissolved, immediately add the buttermilk,orange juice,orange zest and vanilla extract, whisk everything well..

Gradually add the dry ingredients to the wet ingredients, mix it well with a spatula,batter will be quite thick but dont overmix the batter,else ur muffins will turn hard...Drop enough batter to the silicon muffin tray and bake for 20-25minutes until a skewer inserted comes out clean..

  5. I know it was fun watching the match. I couldn't watch the whole match .. time zone! but what an ending huh!! :D I was jumping around the whole time like a kid. I miss my India ..

    These muffins are brilliant .. what better way to celebrate the victory than make something yummy :)
