Its quite a few days i didnt put my hands together to prepare breads as i went on vacations..i was really waiting and trying out breads with fruits and nuts as swirl breads after making swirl bread with spicy filling quite a long back...My Spicy Swirl Bread was a big hit and after that i never tried again swirl bread..Voila!! here is my another sweet swirl bread with dry fruits and nuts..A simple but yet a tasty and delicious evening snacks which suits incredibly also for morning breakfast with hot coffee, kids will love this sweet swirl bread...I always want to prepare my breads as healthier version so i went to whole wheat pastry flour and all purpose flour instead of trying out this swirl bread completely with all purpose flour, so needless to say this fruits and nuts swirl bread goes to Madhuram's Whole Grain (Eggless) Baking Event (Whole Wheat) and to Sunday Snacks - Snacks With Bread hosted by me and finally to Susan's Yeastspotting...
2cups Whole Wheat Pastry flour
1cup All purpose flour
1tbsp Active dry yeast
1cup Luke Warm Milk
1tsp Salt
2tsp Sugar
3tbsp Melted butter
1tbsp Flour for dusting
For Filling:
1/4cup Dry fruits (chopped)
1/4cup Nuts (sliced almonds,hazel nuts)
1/4cup Sugar
1tbsp Cinnamon powder
Mix the luke warm milk, salt, sugar n yeast in a bowl...keep aside for 5 minutes, the yeast will turn foamy...take the flour in a large bowl, add the foamy yeast to the flour with 2tbsp of melted butter n knead them as dough, they will extremely sticky, but after kneading them for few minutes they will turn elastic...place the dough in a greased bowl and keep the dough in a warm place, dont disturb them for an hour...
Now roll the doubled dough as thick disc..springle the finely chopped dry fruits( i used apricot, raisins, few cranberries) and sliced nuts and finally springle the sugar and cinnamon flour over the fruits and nuts..roll again the fruits and nuts filled bread and place again in a greased loaf pan and keep again in a warm place until they double the volume..
Preheat the oven to 350F... now brush the dough with the remaining melted butter and just springle the sliced almonds and sugar over the bread dough..Arrange the loaf pan in the middle rack of the preheated oven and bake them for 25-30minutes r else until the bread turn golden brown...Remove the baked bread from the oven n keep aside for 5 minutes, remove the bread from the loaf pan n let them cool atleast for 30 minutes before serving...
Enjoy each and every bite of this yummy swirl bread!!!

Lovely looking bread and a truly delicious filling.
Hi Priya, I tried your receipe with whole wheat flour ( as i am not getting whole wheat pastry flour) with additional of half a cup milk but bread turned a bit harder on the top and bread didnt raise as shown in your picture. Can u help me out how to make his bread using Whole wheat flour instead of whole wheat pastry flour.
Hi Padma, did u kept ur dough in warm place to get raise to double their volume, this is really very important while making out bread, u can go for all purpose flour if u r nt able to get whole wheat pastry flour...hope this helps..
Pl tell me what do u mean by warm place. I live in Chennai and i thought this climate itself is warm and so kept the dough on the kitchen platform. As u said it didnt raise double even after 3hrs. Also tell me is there any difference in using whole wheat pastry flour or whole wheat flour.
Padma, oh u r living in chennaiya, i thought u were living in abroad, we used to keep the dough bowl oven which have been preheated just for 5 minutes at 350F and put off the oven, i'll usually arrange my dough bowl with lid closed in the preheated oven and this helps the dough to raise their volume, wat kind of yeast u have used to make out this bread? pls let me know..wheat pastry flour is quite better to use when u go for yeasted bread or pastries...
I used a dried yeast which was available in the nearby shop. I am also having ALLINSON Dried Active Yeast from UK. Next time i am planning use this one. As u said i will preheat the oven and keep the dough. Only problem is this whole wheat pastry flour. I need to check out someother grocery shop for this. Do u have anyother substitute for Whole wheat pastry flour?
