Strawberry Kulfi

Kulfi is a popular flavored frozen dessert made from milk which originated in the Indian subcontinent and is popular throughout India.It comes in various flavours, including pistachio, malai, mango, cardamom (elaichi), saffron (kesar)the more traditional flavours, as well as newer variations like apple, orange, peanut, and avocado.Kulfi is prepared from evaporated milk, sweetened condensed milk and heavy cream. Then sugar is added and the mixture is further boiled and cornflour-water paste is added. This paste thickens the mixture, although it is boiled for an additional few minutes. Then flavourings, dried fruits, cardamom, etc. are added. The mixture is then cooled, put in moulds and frozen...kulfi moulds are removed from the freezer 10-15 minutes before serving...For a change i prepared this strawberry kulfi with hung curd, low fat cream, strawberry puree, sugar and with strawberry chunks...This strawberry kulfi is really fat free since i used hung curd, this hung curd turned out this strawberry more creamy and too yummy.


2cups Hung curd
1cup Low fat cream
1/4cup Sugar (increase if needed)
1cup Strawberry puree
1/4cup Strawberry chunks
1tbsp Strawberry jam

Whisk together hung curd, low fat cream, sugar, strawberry puree together until the sugar get well mixed...Add few strawberry chunks in a kulfi mould and pour a ladle full of strawberry-cream mixture in the kulfi mould and add few strawberry chunks over the strawberry cream mixture as second layer and finally finish the kulfi mould with strawberry-cream mixture...arrange in freezer for overnite... after a day take out the strawberry kulfi and serve....While serving mix few strawberry chunks with strawberry jam and serve over the kulfi...
