Spelt flour is my recent favourite, i accidently picked a packet of spelt flour instead of gluten free flour. But trust me, though i did a mistake, i seriously enjoy baking out some incredible bakes with this very ancient grains. Spelt is known as hulled wheat which is a species of wheat cultivated since a long. Spelt flour breads are important staple in few parts of Europe since bronze age. As much as like Wheat, barley and rye, Spelt is also a gluten grain. You might have know about gluten, its a protein that gives breads and other baked goodies their texture. Obviously spelt flour replace very well whole wheat or whole grain flour in most of the breads. Spelt is an excellent healthy whole grain, eating spelt in your diet gives the fiber content. Fibre is essential for healthy digestive system. Hence spelt flour may be very much helpful as a part of weight loss diet. Spelt flour contains little more protein than the usual wheat. Keep in your mind, that spelt flour is not suitable for a gluten free dieting people.
Spelt works awesome for baking some breads or dinner rolls easily and its really very interesting to work with this flour. I loved baking Hamburger buns with spelt flour and enjoyed those buns for our dinner with some grilled meats. Since we loved this buns, i couldnt stop myself baking out again with spelt flour. Hence i gathered all the ingredients to bake out some easy dinner rolls rather than sticking with some shaped breads.To bring more nuttiness to this incredible dinner rolls, i went on adding some mixed seeds to this easy breezy dinner rolls. These bread rolls are going to be a part of Bake-a-thon, a yearly baking event we usually run every year during december. And we Bake-a-thoners will be posting three bakes per week on mondays, wednesdays and fridays. And am copping up with usual blogging marathon along with Bake-a-thon.
4 cups Spelt flour
1tbsp Instant yeast
1tsp Salt
1tbsp Sugar
1+1/4cups Luke warm water
5tbsp Olive oil
1/4cup Mashed potatoes
1/4cup Mixed seeds (pumpkin seeds, flaxseeds, sesame seeds, sunflower seeds)
Take the flour, yeast,mixed seeds, sugar and salt in a bowl.
In an another bowl, mix the mashed potatoes olive oil, water.
Add this wet ingredients to dry ingredients, mix everything well and knead well.
Sprinkle some flour on the kitchen top, drop the dough and knead everything for 5 minutes, until you get a smooth surface.
Drop the dough to a greased bowl, cover and let it sit for 2 hours.
Once the dough doubled the volume, remove the dough from the bowl, punch down and divide the dough as 12 pieces.
Knead and shape each piece into a ball, and place on square shaped baking pan.
Cover with a towel. Allow to rest for 30-45 minutes.
Preheat oven to 350F/180 C. Brush the top of the bread rolls with water.
Bake for 20-30minutes, or until the top turns brown.

The bread rolls look fantastic with spelt flour and those mixed seeds . The seeds must be giving a lovely crunch , beautiful looking rolls !

ReplyDeleteFor now we don't have enough a choice of baking with spelt flour, but looking at the amazing texture of the buns I am really tempted to use it. Hope it comes to Madurai soon.
