I have been baking some preservative free breads at home since ever the yeast god works fabulous with me. Though active dry yeast works prefect for me, i have been using instant yeast since a while as they are seriously very easy to handle. Hence bread baking have became a routine whenever am free at home. Obviously my family members look for homemade freshly baked breads to have as their sandwich or to kick start their day with homemade breads for their breakfast. Most of our breakfast calls for bread,butter and jam as they are seriously hasslefree and easy to finish the breakfast with. You may guess that its really rare for me to make our Indian breakfast dishes earlier in the morning as we start our day with different time schedules. Coming to my today's post, i baked this bread during a weekend for our snacks. Yes we love stuffed breads, hence i baked this bread for our snacks as they are quite filling and satisfying to have with a cup of coffee.
If you would have went through my previous post, you might have noticed that am running this week's blogging marathon with A dish with different shapes as theme. After posting rose shaped doughnuts, am here with an another dish with different shape. Usually bread is baked either as loaf, rolls or braided. Hence i opted for a different shaped bread and Voila a hand bag shaped vegan stuffed bread with a mix of seeds. I stuffed this bread with a simple but yet a delicious rajma and potato masala to bring some spiciness to this ultimate bread. An excellent bread to munch with your favourite coffee or tea for your evening snacks. Hope you guys like my hand bag shaped vegan bread. Am yet to practice for bread weaving however i was happy with the outcome.
For the Dough:
2+1/2 cups All purpose flour
1cups Whole wheat flour
2tsp Instant Yeast
2tbsp Sugar
1tsp Salt
1/4cup Pumpkin Seeds
2tbsp Sunflower Seeds
2tbsp Whole Flax seeds
1tbsp Sesame seeds
2tbsp Flaxseed meal whisked in 6tbsp of hot water
1/3cup Vegetable oil
Stuffing:
3nos Potatoes (cooked & mashed)
1cup Mashed Rajma

For the Dough:

2tsp Instant Yeast
2tbsp Sugar
1tsp Salt

2tbsp Whole Flax seeds
1tbsp Sesame seeds
2tbsp Flaxseed meal whisked in 6tbsp of hot water
1/3cup Vegetable oil
Stuffing:
3nos Potatoes (cooked & mashed)
1cup Mashed Rajma
2nos Onion (chopped)
2nos Green chillies (chopped)
1/2tsp Garam masala powder
1/2tsp Fennel seed powder
1/4tsp Turmeric powder
Salt
Oil
Chopped coriander leaves
Heat enough oil, fry the fennel seed powder, add the chopped onions,chopped green chillies and saute for few minutes until the onions turns transculent.
Add the mashed rajma,mashed potatoes,garam masala powder,salt and cook everything in simmer until the minced meat-potato gets well coated with the masala.
Add the chopped coriander leaves to the potato-rajma filling and put off the stove,keep aside and let it cool completely.
Kneading & Shaping:
Take the all purpose flour, whole wheat flour, yeast, seeds,sugar, salt ,oil,millets and flaxseed meal mixture in a large mixing bowl. Gradually add the luke warm water and knead everything as soft dough.
Transfer the dough to an lightly greased bowl, wrap it and keep aside for 2~3 hours.
Divide the dough as 3 medium big sized balls and two medium sized balls. Roll a medium sized ball as shown in picture as a bib shaped dough to form the backside of your hand bag bread and divide a medium sized balls as two and twist them as shown in picture for the handle of the bag.
Roll the medium big sized balls as round disc. Slice the rolled disc as ropes and weave them, keep aside.
Meanwhile stuff the already prepared bib shaped disc with the potato rajma stuffing. Now gently cover the stuffing with the weaved dough.
Now divide the medium-big sized balls as three pieces, braind them and seal the edges of the bag with the braid.
And now with the remaining dough,decorate the bread as your desire either as flowers or else with small dough balls.
Keep the shaped bread for an hour until they double their volume.
Brush the top with oil and Preheat the oven to 350F.
Bake the bread in medium rack for 30-35 minutes until the bread turns as brown.
Brush the bread again with some olive oil and serve once the bread gets cool.
