Eggless Potato Chocolate Mini Cake

If you are a follower of my space, you might have noticed that am running this week's blogging marathon with a super interesting theme . My theme for this week's blogging marathon is 'Secret Ingredient'. How interesting na. After making a fabulous Butternut squash chocolate loaf like cake and a soft tofu bread, i couldnt stop myself to bake an another fantastic cake with potatoes. Yes you heard it rite, my today's post calls for mashed potatoes and that is the Secret ingredient of today's baking treat. Mashed potatoes are good replacement of eggs in cakes,if am making eggless cakes i'll replace eggs usually with applesauce or else with yogurt. But trust me, mashed potatoes works wonder to bake some eggless baked treats.

Mini potato Chocolate cake

Mashed potatoes gives an extremely fudgy like texture to this cake, definitely a super moist cake to enjoy with favourite drink or else with a scoop of icecream. Yes this cake makes an excellent dessert to relish after a meal. With easily available ingredients, this mini cakeS will definitely gets ready with less efforts.Though i baked mini sized cakes, you can still bake as muffins as well. This cake is completely eggfree and butterfree, but not vegan as i used yogurt in this mini cute cakes. Also to bring the nuttiness, i couldnt resist to sprinkle some almond flakes on the top.

Potato Chocolate Muffins,Eggless Potato Chocolate Cake

1+1/2cups All purpose flour
2tbsp Corn flour
1tsp Baking powder
1/2tsp Baking soda
1/2cup Cocoa powder
1/4tsp Salt
Almond flakes (as per need)

Wet ingredients:
1/2cup Mashed  potato
1tsp Vanilla extract
3/4cup Sugar
1/2cup Oil
1/2cup Yogurt

Preheat the oven to 350F, grease a mini cake pans, keep aside.

Combine the dry ingredients together, sieve twice and keep aside.

Mix well the wet ingredients together in a bowl.

Make a well in the centre of the dry ingredients, gradually add in the wet ingredients, mix gently with a spatula.

Chocolate Potato Muffins, potato mini cake

Pour this batter to a already prepared baking mini cake pans, sprinkle some almond flakes on the top and bake for 25-30minutes.

Allow to cool in a wire rack.

Remove from the cake pan and enjoy.
