Single serving cheesecake are always welcome if you are planning for a get together, And my today's post is definitely an incredible mini cheesecake baked with homemade dulce de leche. Dulce de leche, i just love the flavor of this incredible spread, and preparing dulce de leche at home is definitely a tricky job but yet an easiest one. With a can of condensed milk and a pressure cooker is just enough to prepare your own dose of dulce de leche. I have already made many versions of cheesecakes but dulce de leche cheesecake was in my to do list since a long. Finally i baked some Mini dulce de leche cheesecake as i picked I love you Love you Cheesecake as theme. Once i picked this theme, my first choice was Dulce de leche cheesecakes.
Initially, i want to bake a large cheesecake, but my kids asked me for single serving cheesecake bites. Seriously even i love this mini cheesecakes, as they are easy to carry and enjoy without any fuss. These mini cheesecakes are baked ones, obviously these mini beauties calls for eggs, if you want to make this cuties, you can skip baking and can dish out these cheesecakes as no bake cuties. Usually mini cheesecakes goes for whole biscuits as crust but i opted for rolled oats and tea biscuit crust which makes this mini cheesecakes more delicious and healthy as well. 12no Butter biscuits
1/4cup Rolled oats
3tbsp Butter
1cup Philadelphia cream cheese
1/2cup Mascarpone cheese
2 Large egg
1/2cup Sugar
1/2cup Dulce de leche
Line a muffin pan with muffin liners.
Grind the biscuits, rolled oats as bit coarse mixture, take this mixture in a bowl, melt the butter and add in. Mix well.
Immediately spoon this mixture to the already prepared muffin pan and press them well to form the crust.
In an another bowl, mix the cream cheese,mascarpone cheese, sugar, dulce de leche.
Beat well, add an egg at a time and whisk well until everything gets well mixed.
Pour enough batter upto 3/4th of the muffin liners.
Bake for 10-15minutes.
Remove from the oven, let it cool completely.
Arrange in fridge for atleast four hours or overnite. Enjoy!!
