Äppelkaka/Swedish Apple Cake

Apple cake is quite common in most of the International cuisine, obviously when i picked Swedish recipes for this week's theme, i looked for Swedish version of Apple cake. And the description of this Swedish apple cake pulled me to give a try to this pie like Swedish cake. Actually a pie crust like dough is used for making this fantastic apple cake. With a crispy outer and a succulent apple slices loaded inner, this Swedish apple cake will definitely please your tastebuds. This apple cake is quite a common dessert in Sweden, which is served around the year either for snacks or else for lunch or dinner after a meal. Usually served with a traditional accompaniment aka Vanilla sauce, this cake makes a fabulous and delicious dessert to enjoy without any guilt.

Though i wished to serve this apple cake with the famous vanilla sauce, i didnt want to cook the traditional Swedish vanilla sauce as it calls for egg yolks. Since i ran out of eggs, i simply prepared this apple cake with an egg and served this cake with a scoop of icecream. Kids at home enjoyed thoroughly this apple cake and my lil one asked to bake this Swedish apple cake quite often.Very simple to prepare, this cake is loaded with butter. Trust me its definitely worth to give a try to this Appelkaka.

1+1/2cups All purpose flour
1/2cup Sugar
125grams Butter (chilled)
1 Egg (beaten)
4 Apples (sliced)
3tsp Baking powder
1tsp Vanilla extract

Preheat the oven to 350 F. Grease a springform pan and keep aside.

Blend all of the ingredients in a large mixing bowl except the butter and egg.

Dice the chilled butter and cut it into the dry ingredients using two forks or a pastry cutter.

When the mixture looks like coarse meal add the egg, use your fingers to knead the dough into a ball.

Divide the dough into three parts. Press two parts into the base and part way up the sides of the springform pan.

Roll the remaining dough out between lightly floured waxed paper to form a circle large enough to cover the top of the cake. Set aside.

Slice  the apples as thin and put the apples into the springform pan and lightly press them down.

Make sure none of the apple slices touch the side of the tin .

Gently drop the top crust over the apples. Press the crust down around the edges of the pan to stick the top and bottom crusts together. Arrange few slices of apple on the top of the crust.

Place the pan in the preheated oven and bake until golden, about 20-30 minutes.

Remove from the oven and let it cool completely.

  19. Awesome description and bake. Those apples on top look super delicious and they would taste super with each slice served along with icecream scoop (good choice than the sauce) which kids would happily gobble up. I wont mind a slice or 2 with my cup of coffee.
