After christmas and New year celebration, we usually celebrate Epiphany at the end of this festival season. A king cake or three kings cake made with either brioche dough or with puff pastry sheet have their important place on this festival day. Usually a small porcelain trinket is hidden inside the king cake and this trinket symbolize luck and prosperity to whoever find it in their slice of cake. In French tradition, the finder is designated as king or queen of the evening. I have already shared couple of King's cake with different filling, here comes the different king's cake.

But my today's post goes for an incredible fruit loaded filling. Yes i used apples in this cake filling which makes this flaky king's cake more interesting. Not to forget that i also prepared salted caramel sauce at home to add an absolutely delicious touch to this simple apple & frangipane filling. Trust me we just enjoyed this cake very much.
Since i cant eat apples as am allergic to them i usually go for baking with apples, obviously when i planned this year's king's cake aka Galette des Rois, i couldnt stop myself making this filling with apples along with frangipane filling i usually go for making this cake . If you want to feed apples easily to kids dont forget to give a try to this interesting combination for filling. Salted caramel sauce brings a mild salty taste to the filling. A fantastic cake to give a try.
Salted Caramel Sauce:
50grms Butter
1/2cup Brown sugar
2tbsp Corn syrup
1tsp Salt
In a heavy bottomed saucepan, add butter, brown sugar and corn syrup and put it on high flame on stove top. Stir till the butter melts and everything comes together.
Bring down the flame to low and stop stirring, remove from the stove and let it cool.
Frangipane filling:
1cup Almond powder
2nos Eggs
1/4cup Sugar
1/4tsp Almond essence
1/4cup Butter (room temperature)
Beat the butter, sugar together in a bowl until they turns soft, add the eggs one by one and finally add the almond powder & almond essence, mix everything well and keep the bowl in fridge for half an hour.
For Assembling:
2nos Apples (peeled & sliced as big chunks)
1tsp Butter
1no Egg yolk
1tbsp Milk
2no Puff Pastry sheets
Heat the butter in a pan, and drop the apple slices and cook for a while until the apple turns soft.
Preheat the oven to 350F.
Place a puff pastry sheet over a baking tray,brush the edges of the pastry sheet with the egg-milk mixture.
Pour the already prepared almond mixture over the pastry sheet and spread them evenly,dont spread over the brushed egg mixture.
Now drop the cooked apple slices and top it with enough salted caramel sauce.
Place the another pastry sheet over and give a press over the edges,so that they get well stick...
Make a small hole in the middle of the pastry sheet and with a knife make some lines over the pastry sheet as your desire.
Brush now the pastry sheet with the remaining egg-milk mixture and bake in middle rack of the oven for 20-25minutes or until they turned brown.
Slice it and enjoy.
