Oats are my favourite wholegrains, they are super versatile and you can just dish out many delicious dishes out of this fibre rich grains. After two different wholegrains based dishes, my today's post goes for an eggless, flavourful and definitely a healthy snack cake. Yes this cake is a prefect snack time cake to enjoy with fruit juices or simply to have along with a cup of coffee or tea. This eggless oats based snack cake goes for a simple and a very easy preparation, actually this cake is a kind of one bowl cake. Just add the dry ingredients to the wet ingredients, transfer it to a square baking mould and bake it, thats all. How easy na. Trust me, this cake gets ready really very quick, if you have all the ingredients with you, this cake is seriously very easy to prepare and bake.
Since am running this week's blogging marathon with Kid's delight - Cooking with wholegrains i couldnt resist to post this highly delicious snack cake. An excellent snack to feed kids easily with oats, trust me none will find out that this cake is made with oats until you reveal the famous addition of oats here. 1cup All purpose flour
1cup Buttermilk
1cup Rolled oats
1/2cup Sugar
1/2cup Oil
1/2cup Orange juice
2tbsp Orange zest
1tsp Baking powder
1/2tsp Baking soda
1/2tsp Cinnamon powder
1/2cup Butterscotch chips
2tbsp Sugar (to top the cake)
Preheat the oven to 350F, grease a square baking mould
Combine the buttermilk, oats, sugar, oil, orange zest and orange juice in a large bowl and stir well.
In a separate bowl,sieve together the flour, baking powder, baking soda and cinnamon powder.
Add dry ingredients to the buttermilk mix and stir until just combined.
Finally fold in the butterscotch chips.
Transfer the oats-flour mixture into the baking mould,sprinkle the sugar on the top.
Bake for30-35 minutes until a skewer inserted comes out clean.
Let it cool completely and slice as per your need.
