Am a great fan of sun dried tomatoes, i never forget to get them whenever i feeling like cooking with them. I really want to make my batch of sun dried tomatoes at home but unfortunately Sun god is very rare here. Cherry tomatoes are very cheap here, hence i decided to make some dried tomatoes finally i opted to make my batch of dried tomatoes at home by oven drying. This method may take few hours to dry the cherry tomatoes but this method is truly worth to make dried tomatoes at home easily.Since ever i tried this method of oven dried cherry tomatoes, i do make them quite often. This bread was in my draft as well, finally am posting this incredible savoury bread today.
This savoury bread tastes excellent with grilled meat or salad or else simply as an accompaniment to have along with your favourite dips.This bread is completely egg free,butterfree and obviously vegan as well. The mixed herbs i used in this bread gives an excellent aroma to this simple bread. Instead of making a simple loaf, i juste braided them to serve along with some herbed cream cheese and grilled chicken wings for our dinner and we had a super filling dinner. If you dont have oven roasted tomatoes, you can simply use tomato puree or oven roasted fresh tomatoes to make this fantastic vegan bread. 2cup All purpose flour
1cup Whole wheat flour
1+1/2tsp Active dry yeast
1tsp Sugar
1tsp Salt
1/2cup Oven dried tomato (chopped roughly)
1/4cup Mixed herbs
3tbsp Olive oil
1cup Warm water
Mix the yeast in warm water, sugar and salt,keep aside until its foamy.
Take both flours in a bowl, add yeast mixture, and knead everything as a smooth dough.
Grease a bowl, transfer the dough, cover it and keep in warm place for an hour.
Punch the dough, add the chopped sun dried tomatoes, mixed herbs and knead well.
Divide the dough as three equal balls, knead well and roll them as 3 ropes.
Punch the edges of dough and braid them and seal the edges well.
Place the shaped loaf to a greased baking tray, cover it loosely and let it rise again.
Preheat the oven to 350F.
Brush the top with milk and bake for 25-30minutes or until done.
Let it cool and slice it.
Serve with warm soup, herbed cheese or grilled meats.

Drying tomatoes in an oven sounds interesting and the braided bread looks inviting.

ReplyDeleteIt takes a while to sun dry the tomatoes, though i have done them. Using them in bresds and other bakes is a total treat! And the bread looks absolutely fantastic.
