Vinayagar chathurthi, this famous religious celebration for Lord Ganesh is around the corner. This year we are celebrating Ganesh Chathurthi on 29th september all around India. Every year i miss this celebration in India but somehow am happy that its still summer vacation here, so kids will be at home for the celebration. This time am sure its going to be more fun with kids around, for the celebration.Today am posting this red rice flakes sweet kozhukattai with palm jaggery, am sure this kozhukattais will be very much handy if you are still searching for a quick prasadam for the celebration.This red rice flakes sweet dumplings is quite an easy, simple,delicious and definitely a quickest dumplings to make even if you dont have enough time to make something as kozhukattais/dumplings. Just soaking time may take bit time, else the preparation is quite easier than the usual kozhukattais.
I used thick red rice flakes, hence soaking time is needed. If you are using thin rice flakes, just wash in a strainer and add it to the jaggery syrup, cook together until the mixture gets off from the vessel. However thick rice flakes works well too. I used palm jaggery syrup in this recipe, you can use very well the usual jaggery syrup too.
1cup Redrice flakes (thick)
1cup Grated palm jaggery (adjust as u desire)
1tsp Cardamom powder
1/2tsp Sukku/dry ginger powder
1/2cup Grated coconut
Soak the thick red rice flakes in warm water for 15minutes or until they turns very soft, wash and strain the rice flakes,keep aside.
If using thin rice flakes, just wash it well in a strainer, keep aside.
Add 2cups of water to the plam jaggery, cook in simmer until its gets dissolves.
Strain this jaggery water to remove the impurities.
Bring boil this jaggery water, add the cardamom powder,dry ginger powder, grated coconut, gradually add the red rice flakes and cook until the mixture gets off the vessel.
Take a small ball from the dough and press it with your fingers.
Steam cook them for 10-15 minutes in Idly Cooker.
Serve hot.
