I love coffee and chocolates very much, i cant imagine my day without a cup of coffee, for me a cup of coffee is a booster; much needed to kick start a day. Obviously coffee flavoured bakes are our family favourite as well.For this week's blogging marathon,i picked cakes with different egg substitutes, hence my usual Mocha Cake turned as an eggless version here.But trust me, even this eggless version came out simply awesome. We didnt missed the eggs here. I used both yogurt and apple sauce as egg substitutes, and the texture of the cake came out extremely moist with wonderful coffee flavour.
Apart from applesauce, you can use silken tofu as egg replacer here, this works prefect too, since i dont have tofu i opted for applesauce and yogurt. However this cake is very simple to bake. Even instant coffee powder works well too. 2cups All purpose flour
2tsp Baking powder
1/2tsp Baking soda
1+1/4cup Sugar
1/4tsp Salt
1/2cup Apple sauce
1cup Canola oil/Vegetable oil
1/2cup Freshly brewed coffee
1cup Yogurt
1tsp Vanilla
150grms Chocolate bar (chopped roughly)
Few white chocolate chips
Preheat the oven to 350F, grease a round cake pan generously,keep aside.
Melt the chocolate bar with hot coffee, mix well,keep aside.
In a bowl, sieve the flour,baking powder,baking soda,salt, keep aside.
In an another bowl, take the already melted chocolate-coffee mixture, apple sauce, oil, yogurt,vanilla,whisk well.
Now slowly add the wet ingredients to the dry ingredients, mix gentlu until everything gets well mixed. Dont overmix.
Pour the prepared batter to the greased round mould,sprinkle the white chocolate chips and bake for 35-40minutes until a skewer inserted comes out clean.
Remove the cake, cool completely on a wire rack.
Slice it and serve with a scoop of caramel or coffee icecream.

ReplyDeleteAmruta, just a half cup of hot water with a teaspoon of instant coffee works here,adjust the quantity of instant coffee powder as u desire..Hope this helps.
