How about feeding your kids with some cookies prepared with a natural sweetner,as butterless,eggless,nutty and vegan??,its quite an ideal snacks for me. Recently i tried my hands in making this fabulous zero cholestrol cookies with palm jaggery,peanut butter,chocolate chips with whole wheat flour. Actually i played a game in Facebook by posting the picture of these cookies and a couple for friends played with me to guess the ingredients. After so many guessing finally i revealed that this cookies are prepared with healthy stuffs in it. Also i named this cookies as palm jaggery,peanut butter whole wheat cookies with chocolatechips, sounds a long title na, but Aparna of Home Style Veg Food suggested this name to this cookies hence i named them as this Zero cholestrol cookies. Thanks Aparna, else the title of these cookies would be super long like Sindbad stories.
I used palm jaggery a fantastic natural sweetener for making this cookies, if you dont like or dont want you to use palm jaggery you can still makes these eggless,butterless cookies with sugar or honey. I used chunky peanut butter instead of butter, the addition of peanut butter enhances the flavour in these cookies. If am trying anything new,i'll always add chocolate chips just to attract my kids, seriously my kids didnt stopped munching these cookies,they just loved it. 1+1/2cup Whole wheat flour
1tsp Baking powder
1/2tsp Baking soda
1/4cup Thick palm jaggery syrup
1tsp Vanilla extract
1/2cup Chunky Peanut butter or Smooth peanut butter
1/4tsp Salt
1/2cup Semisweet chocolate chips
Palm Jaggery Syrup:
Take half a cup of grated palm jaggery with quarter cup of water, bring it to boil and cook for few minutes until they turns thick.
Strain this syrup with muslin cloth, and let the syrup gets cool.
Cookies:
Preheat the oven to 350F.
Sieve the flour,baking powder,baking soda and salt in a bowl and keep aside.
Now whisk the plam jaggery syrup,chunky peanut butter,vanilla extract in an another bowl.
Now add slowly the dry ingredients to the wet ingredients, fold in the chocolate chips and turn as a cookie dough.
Line the baking tray with a baking sheet, drop enough cookie dough onto the lined baking sheet.
Bake for 10-12minutes.
Let them cool completely and enjoy..
