Yam & Methi Pakodas

I know am posting again a dish with methi leaves, i couldnt stop myself to use this healthy greens in my cooking nowadays, as i told earlier i picked two huge bunches of this green from Indian grocery few days back which i freezed for further use, eventhough these leaves are frozen i wanted to finish them as quick as possible by cooking quite often,thats why i prepared this crispy pakodas with yam (karunai kizhangu) well known as elephant yam along with those frozen methi leaves...Obviously, this pakodas tastes super crispy,you can serve them either as side dish or for snacks,the choice is yours..We had this crispy beauties for our snacks, definitely an excellent way to feed kids with these healthy methi leaves,since i crushed them well before thawing, they mixed up well with the flours and yam pieces..In case if you are using fresh methi leaves, chop them well before adding them to the flours..

Yam & Methi Pakodas

2cups Yam (cubed & cooked with turmeric powder)
1/2cup Frozen methi leaves (crushed)
4tbsp Gram flour
3tbsp Rice flour
1tsbp Corn flour
3nos Garlic cloves (crushed)
1tsp Fennel seed powder
1tsp Red chilly powder
Salt
Oil for deepfrying

Take the cooked yam,crushed methi leaves, gram flour,rice flour,corn flour,crushed garlic,fennel seed powder, red chilly powder and salt in a bowl, sprinkle some water and mix everything well until the veggies gets well coated with the flours...

Heat oil for deep frying, drop gently the flours coated yam pieces one by one to the hot oil,fry until they turns golden brown, drain the excess of oil with a paper towel and enjoy immediately...

  28. Very interesting combo!!! Methi pakoras are a speciality of mangalore konkani community but they are made in a diff way than this..Addition of yam makes this all the more yummy!!
