I never thought of combining methi leaves,raw mango and channadal together for making gravies or curries..You know some ongoing events in this wonderful blogsphere will pull us beyond our limits to come up with an elegant dish and this kootu was one among those creations..This kootu goes to Harini' Design A Menu, an interesting event where you have to decide a menu with the list of ingredients given by Harini..I have happily planned a menu last time very soon once she announced this event, but this time i have to break my head to design a menu with the ingredients given by her...Yesterday i tried out this kootu with methi leaves, raw mango and channa dal and the kootu turned out simply fabulous,serve it with some crispy potato fries or any spicy side dish for our lunch, you will have a wonderful lunch..Even i served this kootu with hot steaming idlis for our dinner and both together turned out our dinner super filling and delicious...

Appetiziers: Baked Sweet Potato Fries
Main course: Methi,mango & channadal Kootu, Sweet potato & Methi Stir-Fry
Dessert: Baked Strawberry Wholewheat Pancakes
1cup Channadal
Am happy to design my menu with the veggies and ingredients given by Harini, here comes my menu..
Appetiziers: Baked Sweet Potato Fries
Main course: Methi,mango & channadal Kootu, Sweet potato & Methi Stir-Fry
Dessert: Baked Strawberry Wholewheat Pancakes
1cup Channadal
1/4tsp Turmeric powder
1cup Methi leaves
1no Raw mango (small size,peeled & chopped)
1no Onion(chopped)
1no Tomato (big & juicy)
1tsp Sambhar powder
2tbsp Grated coconut
1/2tsp Cumin seeds
Salt
Oil
1tsp Mustard seeds+urad dal
1/4tsp Asafoetida powder
2nos Dry red chillies
Wash and cook the channadal with chopped raw mango pieces and turmeric powder in pressure cooker upto 3 hisses, once the stem get released mash the cooked dal and mango pieces well.
Heat enough oil in a kadai,let splutters the mustard seeds,urad dal and asafoetida powder, add immediately the chopped onions,chopped tomatoes and saute until the veggies get cooked.
Meanwhile grind the grated coconut with cumin seeds as fine paste..
Now add the methi leaves, cook for few minutes until the greens gets shrinks...add the cooked dal-mango mixture,sambhar powder to the greens,bring everything to boil.
Add the already grounded paste to the cooking gravy,cook for few minutes and put off the stove..
Serve hot with rice or either with idlis.

hey priya!, that is a nice event. Preparing a dish with the available ingredients seems familiar. I use to do this at home. I take whatever available and prepare a curry... sometimes new inventions for mankind :)
