I just love one pot meal anytime, also its take less time to get ready while you are in hurry..I never stop cooking one pot meal atleast twice a week to keep me away from my wonderful kitchen since i spend most of my time there...This tuesday i prepared this yummy masala rice using ivygourd and a home made spice powder with usual spices along with flax seeds and mustard seeds...Am almost cleaning my pantry, yep its time to finish almost all the spices especially flax seeds sitting in my pantry since a long, adding flax seeds in spice powder turn them absolutely healthy and can feed anyone easily...I love flax seeds in anything, i never stopped adding them in my recipes..Coming to this masala rice, its suits prefectly as a lunch box menu, serve it with spicy side dish or raita for our lunch,you will definitely have a wonderful lunch..
2cups Cooked rice
1/4kg Ivygourd (chopped lengthwise)
1no Onion (chopped)
2nos Green chillies (slit opened)
1/2tsp Garam masala powder
1/4tsp Turmeric powder
Salt
Oil
1tsp Mustard seeds+urad dal
Few curry leaves
To roast & grind:
1tbsp Coriander seeds
1tsp Flax seeds
1tsp Peppercorns
1tsp Cumin seeds
1tsp Mustard seeds
2tbsp Dessicated coconut
4nos Dry red chillies
Roast and grind as fine powder all the ingredients given under the list 'to grind' and keep aside..
Heat enough oil in a tawa, let splutters the mustard seeds,urad dal and curry leaves, add the chopped onions,saute until they turns transculent, add the slit opened green chillies, chopped ivygourd,salt,turmeric powder and cook in simmer until the veggies turns soft..Now add the garam masala powder, grounded spice powder as per need(sprinkle water if needed), cook again for few minutes..
Finally add the cooked rice, toss everything gently until the rice get well mixed, serve it with raita,papads or any spicy side dish..
