Flax Seed & Cornmeal Idli - Instant Version

Instant version of idlies and dosas are always welcome in our home, thats the reason whenever i feel lazy to make usual batter i'll always go for instant version, this time i tried out making some soft and fluffy idlies using flax seeds and cornmeal, both together turned out these idlies healthy,quite different from the usual version and delicious when served along with super spicy coconut chutney, we loved it..These beautiful idlies goes directly to Satya's inbox as she is hosting Twist the Traditional - Idli & to CWS-Flax seeds guest hosted by Priya,event started by myself and to Akila's DNSW - F..

Flax seed & Cornmeal idli


1cup Yellow cornmeal
1cup Sour yogurt
2tsp Flax seeds
1/4tsp Mustard seeds
1/4tsp Urad dal
1/2tsp Channadal
1no Green chilly (chopped)
1/2tsp Eno Salt or Baking soda
Few curry leaves
Oil
Salt

Heat few drops of oil, let splutters the mustard seeds,urad dal and channadal..add immediately chopped green chillies,curry leaves, fry for few seconds, meanwhile mix the cornmeal,sour yogurt,flax seeds in a bowl,add this tempered spices to them and finally add the eno salt..stir quickly and pour enough batter to the greased idli plates..Steam cook in idly cooker for 15-20minutes..

Serve with spicy coconut chutney..
