Our family favourite is this delicious at the same time filling aloo paratha, i do them with various stuffing prepared with potatoes eventhough our most favourite goes always to this simple and easy stuffing with just mashed potatoes..I havent prepared them since a long and prepared yesterday for our dinner, which i served along with some mushroom kurma, both together works out wonder, eventhough aloo paratha doesnt need any side dish..Its really a complete food and at the same healthy since i prepared this paratha with whole wheat flour and grounded rolled oats along with ajwain seeds..Sending to Sanjeeta's WWC-WholeWheat In Breakfast and to Priya's Veggie For a month -Potato guest hosted by Divya...
2cups Whole wheat flour
1cup Grounded rolled oats
1tsp Ajwain seeds
1cup Curd
Salt
For stuffing:
3nos Potatoes (cooked & mashed)
2nos Onions(chopped)
3nos Green chillies(chopped)
1/2tsp Mustard seeds
Curry leaves
1/4tsp Turmeric powder
Oil
Salt
Take the wheat flour, grounded rolled oats, ajwain seeds and salt together in a bowl,add the curd and knead everything as a stiff and smooth dough,keep aside for half an hour..
Meanwhile heat enough oil,lets splutter the mustard seeds, curry leaves, add immediately the chopped onions,chopped green chillies, sauté everything until onions turns transculent, add the cooked and mashed potatoes,turmeric powder and salt, sauté everything for few minutes,put off the stove and keep aside until they gets cool..
Make medium sized balls from the dough, flatten them as small circles with the rolling pin, drop enough aloo masala and cover the masala by sealing the edges of the flatten dough, dust with all purpose flour and roll them gently as parathas..Heat a tawa, drop this flattened aloo paratha over the hot tawa, drizzle few drops of oil and cook until they get well cooked..
Serve hot with any sort of side dish..
