Tofu bhurji, i do this quite often, but this time i tried adding some boiled potato chunks to turn out the usual bhurji more tastier which vanished within few minutes coz we loved the addition of the potatoes in the bhurji, we enjoyed having this healthy bhurji with hot steaming rasam, both together goes absolutely awesome and delicious..I have already prepared Aloo paneer masala with grated paneer and boiled potatoes, so i dont want to make the same sort of masala this time, thats y i went for extra firm tofu along with mashed potatoes..Sending this yummy bhurji to Pj's Tasty Tofu Treats..
2cups Tofu (grated)
1cup Mashed potatoes
1no Onion (chopped)
1/2cup Capsicum (chopped )
1tsp Ginger garlic paste
1/2tsp Chilly powder
1/2tsp Coriander powder
1/2tsp Garam masala
1/4tsp Turmeric powder
1/2tsp Cumin powder
Salt
Oil
1/2tsp Cumin seeds
Chopped coriander leaves
Marinate the grated tofu with red chilly powder,garam masala, coriander powder, turmeric powder, cumin powder with enough salt, let them sit for an hour..Heat enough oil, let crack the cumin seeds, add the chopped onions ,ginger garlic paste, sauté until the onions turns transculent..add now the chopped capsicum chunks and cook for few minutes, add immediately the marinated tofu, mashed potatoes and sauté in simmer until everything gets well cooked...
Finally add the chopped coriander leaves and enjoy with rice or rotis..
