Are you surprised to read the name of this post?? yep i prepared these thattais sterday evening with quinoa flour also with usual flours..This time i was quite happy to see my diwali savouries with oats and quinoa, eventhough they are deepfried am glad to make out murukkus and thattais with oats & quinoa flour..Even my H was saying that this diwali savouries are healthy savouries, i know he is just pulling my legs..I was quite skeptical to add quinoa flour while preparing the thattai dough, i have added half a cup of quinoa flour for 2cups of rice flour since for the first time am using quinoa flour in my savouries, first i prepared a small batch of thattais to check whether they turn crispy or not, for my surprise they turned out excellent immediately i prepare a huge dough for making more thattais..i loved the addition of quinoa flour in this thattais since they didnt change the taste or the crispiness of this thattais, i am soo excited to share my new culinary invention, the crispy quinoa thattais to u all.
2cups Rice flour
1/2cup Quinoa flour
1/4cup Gram flour
1cup Split roasted gram
2tsp Butter
1/2tsp Asafoetida powder
2nos Dry red chillies
1/2tsp Cumin seeds
1/2tsp Fennel seeds
1tsp Peppercorns
Few curry leaves
2tbsp Channadal
Few raw peanuts
Salt
Oil
Soak the channadal, raw peanuts in hot water for half an hour..Grind the split roasted gram/Pottukadalai along with dry red chillies, cumin seeds, fennel seeds, peppercorns, curry leaves as fine powder..Take this grounded powder along with rice flour, quinoa flour, gram flour, butter, asafoetida powder, salt, soaked channadal & peanuts in a large vessel and knead a soft dough with enough water..
Heat oil for deepfrying, take a golf ball sized dough, line two greased baking sheet or ziplock bags in a poori press, arrange the dough and give a genlte press to flatten the dough..Drop this flattened thattais to the oil, fry until the both sides turns golden brown, repeat the same process until the dough get finished..
Conserve these thattais in an air tightened box and enjoy!
