We all know that all bell peppers are so good for us, but the red bell peppers are the best among the bell peppers, they are loaded with sweet, juicy flavour along with disease fighting antioxidants and with all kinds of vitamins and minerals..these red bell peppers can be very well prepared as raitas, as a delicious veggies for the salad..a cup of chopped red bell peppers has only little calroies and rich in fiber whh may help to prevent certain cancers like colon cancers and helps very much in digestive health, heart health, weight managment and diabetes...Coming to the recipe, this is quite a delicious, easy, colourful, tangy also spicy chutney with roasted red bell pepper chunks and roasted peanuts suits prefectly as side dish for idlies, rotis and many south indian breakfast dishes...
1no Red bellpepper
1no Onion(chopped)
1/4cup Roasted peanuts
1no Tamarind piece (blueberry size)
3nos Dry red chillies
1/2tsp Mustard seeds+urad dal
5nos Curry leaves
Salt
Oil
Chop the red bellpepper as small pieces,heat few oil and add the dry red chillies, fry until they turns brown..add the chopped onions, tamarind piece,chopped red bell pepper pieces and saute everything until the onions and red bellpepper pieces turns bit cooked..keep aside and let them cool..
Take the cooked onion-bell pepper mixture in a mixie, also add the roasted peanuts with enough salt and grind as thick bit coarse chutney..heat again few drops of oil, add the mustard seeds, urad dal, curry leaves and let them splutters, add this tempering to the red bellpepper n peanut chutney..
Serve with any breakfast dish!!
