I just love mint leaves in anything..i cant imagine briyanis without mint leaves, after coriander leaves am a diehard fan of these greeny leaves, a prefect aromatic leaves which dominates the dish with their amazing aroma...i usually buy almost few bunches from the farmer's market where i can find these greeny leaves very much fresh... after making out as many dishes with mint leaves, my favourite goes to minty flavoured pulao just love anything as pulao..mint leaves are well known a natural mouth and breathe freshner, this herb is with many remarkable medical properties, u know very well that many commerical products like inhalers, candies, mouth freshner, chewing gums and toothpastes are prepared basically with mint flavour coz of their strong aroma.Mint promotes digestion, due to its typical aroma. It also soothes stomach in cases of indigestion, inflammation etc..Few researches show that certain enzymes present in mint leaves may help to cure cancer, this herbs are used as condiment and decorative item almost in all worldwide cuisines..drinks prepared with mints cool you while its summer, its a good relaxant and mint juice is an anitspetic, excellent skin cleanser...
2cups Cooked Basmati Rice
1no Onion (chopped)
3nos Green chillies ( slit opened)
1/2tsp Cumin seeds
15nos Cashew pieces
1/4cup Green peas (frozen)
1tsp Ghee
Oil
Salt
To Grind:
1cup Mint leaves
1/4cup Coriander leaves
1tsp Fennel seeds
10nos Peppercorns
1/2tsp Cumin seeds
1no Cinnamom stick
3nos Cloves
2tbsp Grated Coconut
Grind all the ingredients from the list 'To Grind ' with enough water as fine paste and keep aside..Heat oil in large sauce pan and add the cumin seeds, let them crack, add the cashew pieces and fry until they turns golden brown..add immediately the onion pieces and slit opened green chillies, saute everything until the onions turns transculent..add the green peas ,salt and grounded paste to the pan and cook everything in simmer until the oil get separates, it will take hardly 10 minutes...
Now add the already cooked rice to the pan and toss gently until everything get well mixed..finally drizzle the ghee over the minty cashew and green peas pulao..
Serve hot with any side dish as u desire!
