After trying out kalakand with rose syrup, here is my new sweet dish with grated carrots, as usual i prepared kalakand with ricotta cheese, milkpowder, grated carrots,cardamom powder, sugar and butter..its ressembles quite between carrot halwa and kalakand, just love it..as usual its quite easy to prepare in microwave, just need 20 minutes to prepare this delicious kalakand with carrots, one of the best sweet i have even prepared..just loved it..My H didnt stopped having this delicious, yummy and lovely colouful carrot kalakand...This kalakand goes to MFT-Cheese guest hosted by Poornima of Tasty Treats, event started by Bindiya,also goes to FIL-Carrots event by Sanghi of Sanghi's Food Delights..am dedicating this delicious colourful carrot kalakand to my H who loves any sort of sweets...On the way to Srivalli's Mithai Mela...
1cup Ricotta cheese(full fat)
1/2cup Carrot (grated)
1cup Sugar
2cups Milk Powder(low fat)
1/4cup Pistachios n Almond pieces
1tbsp Butter+1tsp butter
Take a microwave bowl, add the ricotta cheese, sugar, milk powder n butter n stir them continously until the cheese gets well mixed, this may looks as creamy paste..keep the microwave in high temperature for 5 minutes n cook this milk mixture, they may doubled their volume, stir them once..meanwhile in a another microwave bowl add a tsp of butter and grated carrot, cook for high for 2 minutes..add the grated carrot to the cheese mixture,keep again in high temperature for 15 minutes n cook again..
Keep an eye while doing this, u may see the milk mixture might have turned slightly brownish colour at the edges..now transfer to a flat dish r plate, sprinkle the almond n pistachios pieces on the top as u desire..keep aside n let them cool..once they r cooled cut them any shape as u wish..
