Coriander an excellent herb...Chopped coriander leaves are used as a garnish on cooked dishes such as dal and many curries. As heat diminishes their flavour quickly, coriander leaves are often used raw or added to the dish right before serving. Tofu is similar to cheese from the soyamilk..they r rich in proteins..as i want to insert those awesome soyacheese, i prepared them as biriyani..they turned out excellent, really yummy with amazing flavour..the recipe starts like this..
2cups Basmati Rice
1/2cup Tofu pieces
1tsp Red chilli powder
1no Onion Chopped lengthwise
1no Tomato Chopped
1tsp Ginger paste
1tsp Garlic paste
1tsp Garam masala powder
1/4cup Ghee r Oil
1cup Thick Yoghurt
Salt
Whole spices (bayleaves, cinnamon sticks, cloves, cardamom pieces)
half lemon
To Grind:
1cup Coriander leaves chopped
1/4cup Mint leaves chopped
2nos Green chillies
1/2tsp Peppercorns
1tsp Cumin seeds
Marinate the tofu pieces with red chilly powder, garam masala powder n salt for atleast 1 hour...grind all the ingredients in the list under 'To Grind' with half cup of water as fine paste...keep aside..
Wash thoroughly the basmati rice with enough water n strain the excess of water in a colander...heat tsp of ghee in a pan..fry the washed basmati rice for a while...keep aside..
Heat the rest of the ghee in a pressure cooker, add the whole spices n let them get fried, add now the chopped onion, chopped tomato pieces with garlic n ginger paste n cook them well until the raw smells goes away..now add the grounded paste to them n cook until the ghee gets separates a bit...now add the marinated tofu pieces n cook just for few seconds, dilute the thick yoghurt with 1cup of water, this make 2cups of yoghurt...add the diluted yoghurt to the pressure cooker, check for salt..add enough salt if needed, once the gravy starts boiling add the already fried Basmati rice to the pressure cooker, stir them n close the lid..cook them upto 2 whistles n put in simmer for 5 minutes...put off the stove..squeeze out the lemon juice over the coriander biriyani...
Spicy, flavoursome Coriander Tofu Biriyani is ready to serve...serve them hot with carro raita..
