Bulgur is a cereal food made from several different wheat species, but most often from durum wheat n its highly nutritional value makes it a good substitute for rice or couscous..It has a light and nutty flavor...Bulgur can be used in pilafs, soups, bakery goods, or as stuffing.. i tried them with cabbage to prepare them as soup..very good for dinner as well as very good for diet..
2cups Cabbage chopped
1/2cup Bulgur
1no Onion Chopped
1no Carrot chopped
2no Tomatoes chopped
1/2tsp Pepper powder
2nos Vegetable stock cubes
1/4tsp Dry basil leaves
Salt
Olive oil
Heat oil in a pressure cooker, add the chopped onions n stir them well with vegetable stock cubes, now add the chopped tomatoes pieces , carrot pieces.. stir them continously until they get bit cooked..add the chopped cabbage n cook for a while..now add enough water to the cooked veggies n bring them to boil..add the bulgur to the veggies n add one more cup of water as well as pepper powder n salt , close the lid n pressure cook upto 2 hisses...put off the stove..keep aside n let it cool..
Blend the cooked veggies n bulgur with hand blender..Serve hot !!! Really yummy soup!!! springle the dry basil leaves while serving...
