Healthy Breakfast Bar

Actually am bored to get store bought cereal bars for our breakfast,somehow i'll get the cereal bars just to feed my daguther as she dont like to have a complete breakfast. Personally i love to give a cereal bar to my daughter with a cup of milk before she leaves to her school, so that she can have the cereal bar at school if she dont feel like having immediately. Coming to this healthy breakfast bar, i prepared this bar quickly through stove top and its take less than 15minutes to make, if you have enough time to make you can go for baking mode.

With loads of seeds,nuts, rolled oats and dry fruits, this healthy bar is a prefect bar to kick start your day. This healthy breakfast bar is quite filling, wholesome,definitely an energy booster, enjoy this beautiful bars with a cup of milk for your breakfast, am sure you guys will have a super satisfying breakfast if you have enough time to have a complete breakfast. 1+1/2cups Rolled oats
2tbsp Mixed seeds (flax seeds,sesame seeds,pumpkin seeds)
1tbsp Almond flakes
10nos Cashew nuts (broken as small pieces)
1/4cup Mixed Dry fruits (black & golden raisins,apricots,pineapples)
3/4cup Honey
2tbsp Brown sugar
1/4tsp Cinnamon powder
A pinch Nutmeg powder
1tsp Vanilla essence
2tbsp Butter

Dry roast the rolled oats, mixed seeds,mixed dry fruits,almond flakes,cashewnuts until a nice aroma comes out, transfer the roasted mixture to a plate.

In the same pan,heat the butter,honey,sugar,cinnamon powder,nutmeg powder,vanilla essence and cook until they starts bubbling.

Add immediately the roasted oats mixture and cook in simmer until the mixture gets off from the pan.

Immediately transfer it to a baking sheet lined over a baking pan, with a spatula press it well to form a rectangle.

Let it cool completely and slice it as bar or squares.

Enjoy with a cup of your favourite drink.

Easy Cheese Sandwich

How about starting your day with a super cheesy,easy breezy and simple super filling sandwich?, definitely i wont say 'no', as i told earlier am not a breakfast person.I love to have a thick smoothie or a coffee with a bread just for the sake of not skipping the breakfast. But if someone prepare a quick sandwich with cheese specially for me, am ready to have it for my breakfast without any hesitation.I prepared this cheesy sandwich for my lil one for his breakfast as he love cheesy sandwiches very much.

I used grated gruyere cheese for making this sandwich and this sandwich goes for a super quick preparation and obviously its one of the easiest sandwich even a kid with an adult helps can prepare easily for his breakfast or snack. 4nos Bread slices
Gruyere cheese (as per need)

Place the gruyere cheese as per need over a bread slice, cover it with an another slice.

Either you can choose to prepare this sandwich either with a sandwich maker or in a pan.

I prepared mine in a sandwich maker.

With a cup of tea and apple, am sure you will definitely have a super filling breakfast.

Honey & Cinnamon Challah Bread Toast

I love to make bread toast with leftover stale breads usually or else i'll turn them as breadcrumbs instead of trashing. Everytime while making the famous Jewish challah bread, i always want to make some bread toast with the leftover slices. Finally i have to say that my wish came true, yep i prepared this beautiful honey cinnamon bread toast for our breakfast during a weekend brunch with a loaf of leftover challah bread. Every 3rd of the month,a bunch of food bloggers run the famous blogging marathon and today we are running our 25th edition, cant believe its our 25th edition and am very happy to be a part of this wonderful family, i just missed an edition coz of my operation last year else i have never failed any edition. Do you know few of the marathoners have organised something interesting secretly to celebrate this 25th edition and hope they will reveal it very soon. 6nos Challah bread slices (slice them as bit thick)
2cups Milk
3nos Eggs
1tsp Cinnamon powder
Honey /Agave syrup (as per need)
Butter or oil for toasting

Beat the eggs with cinnamon powder, honey and keep aside.

Dip a bread slice in the milk and dip immediately to the egg mixture until the bread gets well coated with the egg mixture.

Heat enough butter or oil in a pan, drop immediately the egg coated challah bread slice to the hot butter or oil and toast it on both sides until they get well toasted.

Serve it with honey or else with agave syrup.

Turai Urad Dal

You might have cooked turai aka the famous ridge gourd atleast once in your kitchen, but have you tried cooking this wonderful Indian vegetable with split urad dal?, if not you wont hesitate a second to give a try after seeing this post. Turai urad dal is my last and favourite creation for our this month's Magic Mingle an event by Kalyani, our this month's magic ingredients is both urad dal and lemon. Omg, wat an incredible choice na, when i saw these two magic ingredients,my mind was blank and i dunno wat to cook with it.

But finally while going through my fridge, i finally decided to cook both ridge gourd and split urad dal together as this beautiful dish. This dal goes simply awesome as an excellent side dish with rotis also very well with rice. I served this dal with fried chicken and everyone at home enjoyed this dal and we loved it.


1/4cup Split white urad dal
1/4cup Masoor dal
1no Ridgegourd (medium size & chopped)
1no Onion (chopped)
1no Tomato (chopped)
1/4tsp Turmeric powder
1tbsp Lemon juice
1/2tsp Mustard seeds
1/2tsp Urad dal
2nos Dry red chillies
Few curry leaves
Oil
Salt

To roast & grind:
2tbsp Coriander seeds
2nos Dry red chillies
1/2tsp Asafoetida powder
1/4tsp Fenugreek seeds
3tbsp Coconut (grated)

Take the washed urad dal,masoor dal,chopped ridgegourd,chopped onions,chopped tomatoes with turmeric powder,salt and enough water in pressure cooker.

Close the cooker with lid and pressure cook for 3 whistles.

Meanwhile dry roast the ingredients under the list 'to roast & grind' as fine powder.

Once the steam gets released, smash the cooked veggies and dal with a spatula.

Now add the grounded roasted spice powder to the dal and cook everything in simmer.

Adjust the thickness of the dal with enough water.

Heat the oil in a pan, lets splutter the mustard seeds,urad dal, add the dry red chillies,curry leaves and fry them.

Add this tempered spices,lemon juice to the dal and give a stir.

Serve hot with rice.
