Nothing will be much easier to prepare than coconut rice...its really a quick, simple n tasty rice with simple ingredients, can prepare them very quickly even u dont have much time to prepare ur lunch, its one of the famous lunchbox menu..most of us would have carried them for our lunch while schooling..i love this rice with fried papads, my most fav one...
2cups Cooked Basmati Rice
1cup Grated coconut (fresh)
1/2tsp Mustard seeds n urad dal
1/4tsp Channa dal
1/4cup Peanuts
2nos Dry red chillies
5nos Curry leaves
1/4tsp Peppercorns( pounded)
Salt
Oil+1/2tsp Ghee
Heat oil in a pan, add the mustard seeds, urad dal, peanuts, channa dal, dry red chillies n curry leaves n fry them until they turn brown...add the freshly grated coconut pieces with salt n fry them for a while until they turn stiff n slightly brown...switch off the stove...
Add now the already cooked rice to the fried coconut.. mix well for a while, drizzle the melted ghee n springle the pounded peppercorns...
Serve them with fried papads.. Divine na!!!!!

Christmas Morning Muffins
For the month of December Rosie n Maria of Sweet and Simple Bakes announced to prepare Christmas Morning Muffins.. These muffins r quick n easy bake for christmas morning n they tastes really delicious with superb flavour coz of cinnamon n nutmeg powders ... Rosie n Maria also proposed to change certain ingredients which may not available in certain countries, for dry cranberries they asked to use any dry fruits, so i used raisins n dates for my muffins, else i just followed each n every steps as they followed to prepare these delicious christmas morning muffins...
250grs All purpose flour
1+1/2tsp Baking powder
1/2tsp Baking soda
100g Sugar
1tsp Cinnamon powder
1/4tsp Nutmeg powder
1/2cup Clementine's juice (fresh) +1tbsp Clementine's Zest
1/2cup Milk (full fat)
1/4cup Vegetable oil
1egg
1/2cup Dry Raisins+Dates pieces
For Topping
3tsp Granulated sugar
Take the flour, baking powder, baking soda, sugar, cinnamon powder n nutmeg powder in a large bowl, add the clementine juice to the milk n keep aside...add the oil n egg n beat them lightly...pour the liquid mixture to the bowl of dried ingredients n stir until everything get well combined...dont beat them for a long..Preheat the oven to 400F..
Fold the dried raisins n dates pieces n spoon the batter in the muffin cases, springle the granulated sugar n the top..Bake them in middle rack for 20 minutes until golden brown r else a skewer inserted into the centre comes out clean..
Tasty Muffins r ready, they can eat now either plain r with butter n marmalade..

Thin rolled oats are smaller flakes that are broken into much smaller flakes, and are ideal for uses in such items as baby food and instant oatmeal. The thinner rolled oats can also be ground into a powder and used to prepare thick broths or as a thickener in stews. Rolled oats are often considered to be an excellent choice when it comes to a healthy diet. In general, oatmeal made from rolled oats is understood to help reduce the amount of bad cholesterol in the bloodstream. For people who suffer from Type 2 diabetes or are in a pre-diabetic condition, rolled oats present a much better choice than most processed cereals. As an excellent source of dietary fiber, iron, and thiamine, rolled oats can be a significant part of a healthy diet...Sterday i prepared cookies as vegan with vegetable shortening, rolled oats n dark black chocolate bar...its quite simple n healthy cookies...
2cups Allpurpose flour
1no Dark Chocolate bar (250gms)
1/2cup Rolled Oats
1cup Sugar
4tbsp Vegetable shortening
2tbsp Applesauce
1/2tsp Baking soda
1tsp Baking powder
Break the chocolate bar as small pieces...keep aside few pieces , melt the remaining chocolate pieces with vegetable shortening in a microwave bowl...whisk them well n add the sugar, applesauce to the melted chocolate mixture...beat well until the sugar gets well dissolved...
Add now the all purpose flour, rolled oats ,baking powder, chocolate pieces n baking soda n turn them as dough...preheat the over for 350F.. line a baking paper over the baking tray..make small balls out of the dough r drop a scoop of the dough over the baking paper, leave some space between the cookies...bake them for 25minutes..as these cookies r made with chocolate, they will be soft once u take off from the oven, let them cool for few minutes before munching them...Can conserve the cookie dough for two days in fridge, prepare them whenever u need for...
Store the cookies in an air tightened container...Kids will love them for the sure....

Redbell Pepper N Mushroom Soup
Mushrooms are brimming with protein, B vitamins (riboflavin, niacin and pantothenic), and minerals (selenium, potassium,and copper). They're low in calories and may have antibacterial substances to help the body. Cooked fresh mushrooms offer the most nutritional benefit versus the canned version that may have more sodium.Clean mushrooms only when you are ready to use them. Remove any bits of the debris on the surface, rinse with cold running water or gently wipe the mushrooms with a damp cloth, paper towel, or soft brush.Mushrooms can be frozen but they must be cleaned, cooked, and placed in a ½ cup or 1 cup container to freeze. Don't forget to mark the date on the container, frozen mushrooms will last several months.Mushrooms are versatile and may be eaten raw or cooked whole, sliced or chopped. Red bell peppers also contain lycopene, which is a carotene that helps to protect against cancer and heart disease. Bell peppers have also been shown to prevent blood clot formation and reduce the risk of heart attacks and strokes probably due to their content of substances such as vitamin C, capsaicin, and flavonoids. This soup is very nutritious, tasty , simple n flavoursome also with lovely colour.
5 nos Button mushrooms big sized
1no Red bell pepper
1 no Onion
1no Big potato
1 cup Coconut milk r milk
1/4cup Tomato puree or fresh tomato juice
1+1/2nos Vegetable stock cubes
2 tsp Soya sauce
1tbsp Olive oil
Salt (as per taste)
1 tsp Pepper powder
Coriander leaver or chives for garnishing
1 pinch Turmeric powder
Cut Mushrooms, red bell pepper , onion and potatoe into small pieces...Heat the olive oil in a heavy bottomed pan or else pressure cooker..add chopped onions n stir until its turns transculent, add red bell pepper n potatoes pieces..stir them togther n let it cook for a while..
Mix pepper powder n turmeric powder with a bit salt n add n mix this with the mushroom pieces n keep them aside..once bell pepper n potatoes r slightly cooked add tomato puree,soyasauce,coconut milk, vegetable stock cubes,water(adjust water as u wish) and bring them to boil..once they start boiling add mushroom n stir everything well..Cook everything in simmer for half an hour..add salt n pepper as per taste..Cool it for a while.
Blend them with a hand blender or with food processor..grind them coarsely n serve them hot with coriander or chives chopped leaves..Will be very good for dinner with some grilled bread slices r else with garlic bread..
Enjoy ur soup!!!!
