This Week's posts are going to be Wraps and Rolls, yes this week's theme for the first week of blogging marathon of this month is Wraps and Rolls. Wrap is a kind of sandwich which is made usually with soft flatbread like tortillas, lavash or pita flatbreads. Most of the filling for making wraps calls for cold meats or seafoods stuffed along with lettuce, tomatoes, guacamole, sauteed vegetables or grilled onions with cheese and a sauce. Wraps makes a super filling meal as they are loaded with meats and vegetables in it. However many vegan and vegetarian wraps do exists and you can stuff a wrap with any sort of filling. I have been making wraps at home either with homemade tortillas or else with store bought ones. And am kick starting this week's blogging marathon with a fabulous super healthy and definitely a fusion kebab i have prepared at home with both zucchini and quinoa.
Yes my filling is a vegetarian kebab which consists of grated and sauteed zucchini and cooked quinoa spiced with Indian spices.Obviously you can name this wrap as Fusion wrap as well. Simple to make this wraps calls for some preplanning to dish out these kebab else its quite an interesting wrap to try with any sort of your favourite vegetables or meat kebabs. My pick for making the kebab is Zucchini and cooked quinoa which is later mixed with some mashed potatoes and spiced with Indian spices. Once rolled as kebab, i opted for baking eventhough deep frying or shallow frying works awesome as well. I went with baking them for 20-25mins and then wrapped them in store bought tortilla wraps topped with some vegetables along with ketchup and mayonnaise sauce. We enjoyed this wraps thoroughly for our Sunday's brunch and loved it.
Zucchini & Quinoa Kebabs:
2cups Zucchini (grated)
1/2cup Cooked quinoa
1/2cup Mashed potatoes
1no Onion (chopped)
1/2tsp Red chilly powder
1tsp Chopped green chilli
1tbsp Ginger (chopped)
4nos Garlic cloves
1/2tsp Garam masala powder
Chopped coriander leaves
2tbsp Gram flour/Besan
Salt
Oil for brushing
Heat oil in a pan, add the chopped onions, chopped ginger, garlic cloves, grated zucchini and saute for a while.
Take the sauteed zucchini, cooked quinoa and mashed potatoes and blend as a coarse paste without adding water.
Meanwhile dry roast the gram flour until a nice aroma comes from, keep aside.
Add the garam masala powder, red chilly powder,chopped coriander leaves, roasted gram flour, salt and mix well.
Make medium sized balls from the mixture as roll as a oval shaped patties.
Pan fry the kebabs until they turns brown or bake them in oven for 20-25minutes.
For Assembling:
Storebought Tortillas
Sliced vegetables (as per need)
Baked Kebabs
2tbsp Ketchup
3tbsp Mayonnaise
Mix the ketchup and mayonnaise together in a bowl, keep aside.
Spread the sauce as per need on the tortillas. Top it with baked kebabs, top them with sliced vegetables as per need.
Bring the edges together, wrap it.
Enjoy immediately.

That is a wonderful veg kebab Priya. Zucchini and quinoa is such a healthy combination and the wrap with the fillings and the kebab sounds so delicious..
When I thought of this theme, I couldn't think beyond aloo or paneer, its wonderful and refreshing to read about new tikkis..looks very inviting Priya.
