Eplekake/Norwegian Apple Cake

Scandinavian cuisine includes three countries, yes Norway, Denmark and Sweden. And these three countries shares similar cuisine style. The most important meal of Scandinavians is their breakfast as they start their work early in the morning. Though Scandinavian cuisine goes for easy cooking process, most of their dishes are quite popular around the world. Am running this week's blogging marathon with 'Scandinavian Recipes' as theme. Obviously i picked three different dishes from two of those three countries, and my today's post is from Norway. Eplekake is Norwegian Apple cake, this cake is quite easy one to bake at home with quick procedure.

Eplekake, Norwegian Cake with apples

Norwegian Apple cake is definitely a delightful dessert or cake to enjoy with a cup of coffee or tea. Extremely easy to bake, this apple cake calls for  easy ingredients which is mostly available in our pantry. You doesnt need any fancy ingredients to bake this incredible cake. Though i crossed many versions of baking this cake, i opted for a tart pan as much as i like the original recipe went for. We enjoyed thoroughly this fabulous apples loaded cake for our evening snacks and my kids had this cake even for their breakfast.

Eplekake, Norwegian Apple Cake

125grs Butter(melted)
1+1/2cup All purpose flour
1cup Sugar
2 Eggs
1tsp Vanilla extract
1 tsp Baking powder
2tbsp Milk
2 Apples
1tsp Cinnamon
1tbsp Demerara sugar

Preheat the oven to 350F. Grease a tart pan or cake pan and keep aside.

Take the flour, baking powder in a bowl and keep aside.

Cream the melted butter and sugar with until light and fluffy. Add the eggs one at a time, mixing thoroughly after each egg.

Now add the vanilla extract. Add half the flour mixture and the milk.

Mix thoroughly and then add the remaining flour. Spread batter in the prepared cake pan.

Peel, core and ut the apple in half. Cut each half in to medium sized slices and arrange on the top of cake batter.

Eplekake

Sprinkle with a mixture of cinnamon and demerara sugar on the top.

Bake the cake for 20-25minutes or else a toothpick inserted comes out clean.

Slice and enjoy the cake with a scoop of icecream or else dusted with confectioner's sugar.

First of all I like the spelling of the cake , it’s so interesting . The cake with apples looks nice and spongy and of course sounds lovely . The apple slices must be tasting delicious after baking .

Apple slices on top of the cake are very inviting. Cake looks spongy and beautifully baked. This doubles up as a dessert as well as a snack.
