Poffertjes are festive holiday treat in Netherlands and they are quite popular at both summer festivals and Christmas markets. This Dutch pancakes are small,fluffy pancakes which are made with yeast and flour. Poffertjes ressembles as much as like our own South Indian paniyarams and Japanese Takoyaki though they differ in their ingredients. This classic Dutch treat calls for a special pan which have tiny indentations. Trust me these fluffy poffertjes are prefect choice for a sunday brunch. You can still serve them as a dessert topped with nutella or icecream eventhough the traditional way of serving this tiny pancakes is with melted butter and sieved powder sugar or else with strawberries and whipped cream.
Poffertjes calls for yeast, traditionally buckwheat flour is used for making them but still you can either replace buckwheat flour completely with all purpose flour or else with a combination of both buckwheat and all purpose flour together. I prepared this pancakes batter simply with all purpose flour. Poffertjes is one among the most popular street food in most of the European countries and for my surprise they are also very much known in Jakarta. 1cup All purpose flour
1/4 tsp Instant yeast
1+1/2cups Luke warm milk
1tbsp Sugar
1/4tsp Salt
1tbsp Melted Butter
Mix the instant yeast, sugar and salt to the luke warm milk, immediately add the all purpose flour, melted butter and whisk everything well until the mixture turns smooth and slightly thick.
Cover the bowl and let it sit for an hour in a warm place.
Heat the paniyaram pan/poffertjes pan, grease them generously with melted butter or oil.
Pour a teaspoon of batter to those tiny indentations, cook in medium flame.
Flip it with a wooden stick and cook until the pancakes turns golden brown.
Serve warm drizzled with melted butter and powdered sugar.

this brought up such great feelings of nostaglia for me of the Christmas I spent with my cousins in the Netherlands when I was in college. My cousin and his friends next door pancakes and pasta were all they could make and I ate so many varieties of dutch pancakes the three weeks I stayed there These are reminding me so much of my cousin and his friends and the fun time I had there!
