Bihari Sattu Ka Paratha/Sattu Rotti

Sattu ka Paratha or Sattu Paratha is one of the most popular Indian breads in Bihar region of India. This Sattu paratha is a staple food of Biharis. Sattu is Roasted channa dal flour, and its one the execellent protein source for vegetarians of Bihar. Obviously this sattu is used in many authentic Bihari recipes. The most known dish cooked with sattu is this stuffed paratha. Not to forget that this roasted channa dal flour is full of fibre with many nutritious values in it. Its a super healthy alternative for many in Bihar as its available very much cheap there. South Indians makes excellent chutneys with roasted grams but in Bihar, they makes healthy sattu paratha with the same roasted grams aka pottukadalai (in tamil). We (South Indians) are seriously unaware of this parathas until i get a chance to prepare this nutritious flatbreads at home.

Sattu Ka Paratha, Bihari Sattu Paratha

 Extremely filling, this parathas makes a satisfying meal with a spicy side dish and suits extremely prefect to pack in anyone's lunchbox as well. We are supposed to cook from Bihari cuisine for this month's for Shhh Cooking Secretly, a monthly event started by me, which is now hosted by Mayuri Patel. And my pair is Sujata Roy of Batter up with Sujata, she gave me sattu aka roasted gram flour and asked me to pick an another ingredient of my choice. When she gave me sattu i couldnt think more than wheat flour as my second secret ingredient just to cook some sattu paratha with it. Thank you Sujata for giving me a chance to try my hands with this excellent parathas.

Bihari Sattu Ka Paratha

For Paratha:
2cups Wheatflour
1/2tbsp Oil
Salt
Water for kneading

For Stuffing:
1cup Sattu (Powdered Roasted Chana Dal/Pottukadalai)
1/2cup Onion (finely chopped)
1no Green chilly (chopped )
1/4 tsp Ajwain seeds
1tbsp Mustard oil
Salt
1tsp Ginger (grated)
1tsp Garlic (chopped)
2tbsp Coriander leaves (chopped)

Take the sattu, finely chopped onions, chopped green chilly, ajwain seeds, grated ginger,finely chopped garlic, chopped coriander leaves, mustard oil, salt in a bowl.

Mix well,sprinkle some water to the mixture to bind the stuffing.

Take wheat flour, add oil and salt, add enough water and knead everything a soft dough. Keep aside for half an hour.

Make small balls of the dough, dust the dough balls and roll as a small disc.

Place enough stuffing to the rolled disc and bring the edges together to form a ball.

Sattu Roti, Sattu Stuffed Paratha

Dust the workplace with flour and roll gently as a paratha.

Heat a tawa, drop the paratha and drizzle oil, cook on both sides until the paratha gets well cooked.

Serve hot with spicy side dish.

  12. sattu paratha is one of the tasteful parathas which is great to make when I travel. Looking so delicious. I add mustard oil and pickle as well to enhance the flavor.
