Earthquake Cake/Chocolate Earthquake Cake

Earthquake Cake, this cake is named because the ingredients shift around during and after baking. The cream cheese mixture sinks into the cake, some of the pecans and coconut rise towards the top. It’s an uneven and ‘deconstructed’ looking cake, but inside, it’s gooey and chocolatey and delicious. For those new to baking, it is very simple, as it uses a packet mix as a base, but if you have a favourite chocolate cake recipe instead, just substitute that store bought cake mix with your own chocolate cake.This fun recipe of cake mix cake will be the talk of your next potluck or family dinner definitely if you serve this ultimate cake for dessert. Earthquake Cake gets also its name from the cream cheese swirl mixed into the decadent cake, appearing to crack it apart.

This simple cake recipe tastes absolutely delicious coz of the gooey cream cheese mixture running through it, which makes the cake ultimately super moist. Not to forget that this cake includes some chocolate chips, coconut and pecans for more flavor and texture. The traditional version of this cake have coconut and pecans but no chocolate chips, however i decided to go with chocolate chips, just to please my tastebuds. Been chocoholic, how can i skip the chocolate in this cake, if you want to bake this cake in the traditional way, just omit the chocolate chips. Am running this month's blogging marathon as Mega marathon with A-Z baking around the world. Hence am posting this Earthquake cake as i was supposed to post in Alphabetical order. Though i couldnt able to get the exact history behind this cake, this cake is quite known in America.

1 Box Chocolate Cake Mix (storebought)
1cup Cream cheese
1/4cup Melted butter
1cup Powdered sugar
1cup Chocolate chips
1/2cup Chopped pecans/Walnuts
1cup Coconut flakes/Dessicated coconut

Grease a square pan with enough butter and keep aside.

Meanwhile prepare the chocolate cake by following the instructions in the package of the storebought chocolate cake mix.

Mix the melted butter, cream cheese and whisk until the mixture turns smooth. Add the powdered sugar and beat again.

Drop the chopped pecans, coconut flakes to the bottom of the already prepared pan.

Preheat the oven to 350F.

Pour in the prepared chocolate cake batter and spoon the cream cheese mixture over the cake batter, sprinkle the chocolate chips.

Bake for 30-35minutes.

Let it cool completely, slice and serve with a scoop of vanilla icecream.

  3. Priya the name Earthquake Cake is very catchy ! I saw a similar recipe but with a different name ! I loved the recipe and have bookmarked. Adding chocolate chips has definitely made it sinful and desirable and that's an excellent pick for the alphabet .
