Its peak season of both Kiwi and clementine here, both these fruits are my favourite though i cant eat kiwi raw to enjoy their goodness. However i dont miss eating kiwis, i usually bake or dish out apple sauce with kiwi, else a simple kiwi compote or jam to please my tastebuds. Obviously am posting one of those incredible kiwi based cake today which i baked recently with clementines. I have a reason for it, yes this week's blogging marathon's theme is going to be Seasonal produce. Since its going to be Winter very soon, we are trying to keep ourselves fit to overcome the upcoming nasty winter by enjoying these fruits. Kiwi and clementines, both these fruits are loaded with loads of vitamins especially vitamin C. Trust me we are literally overloaded with these fruits but still if you check my fruit baskets, you can still able to see some kiwis and clementines sitting silently.
Coming to today's recipe,its almost like the same popular upside down cakes we usually bake with apples. However you wont miss fruits in this cake, simple to make, this upside down cake makes an excellent after meal dessert or as an extremely delicious evening snacks. However if you love kiwi and clementines in your desserts or snacks, am sure this cake will definitely become your favourite cake. You can replace Kiwi and clementine very well with any of your seasonal fruits and enjoy this cake with your favourite drink even for a lazy breakfast.
2cups All purpose flour
1cup Sugar
1/2cup Yogurt
1/2cup Clementine juice
1tbsp Clementine zest
1/2cup Butter
2nos Eggs
1tsp Baking powder
1/2tsp Baking soda
1tsp Vanilla essence
Sliced Kiwi (as per need)
Sliced Clementines (as per need)
1/4cup Packed brown sugar
50grms Butter
Melt the butter, add the brown sugar and heat in simmer until the sugar gets dissolves.
Pour this sugar syrup to a 8inch round baking pan.
Now arrange the sliced kiwi and sliced clementines over the sugar syrup and keep aside.
Preheat the oven to 350F.
Beat the butter and sugar until they turn smooth, add the eggs one by one to the butter and sugar mixture until everything turns soft.
Finally add the yogurt,clementine juice beat everything for few more minutes.
Meanwhile sift the flour,baking soda and baking powder, keep aside.
Add the sifted flour, vanilla essence, clementine zest to the wet ingredients, mix everything well with a spatula until everything get well mixed, dont over mix..
Pour the cake batter to the already prepared pan and bake in middle rack for 25-30minutes or until the skewers insert come out clean..
Keep aside and let them cool completely.
Invert the baking pan over a plate.
Slice the cake as you desire, enjoy with your cup of tea.
