Vegan Black Bean & Potato Empanadas

Here comes an another week of blogging marathon, am running this mega marathon with 5 ingredients for 5 weeks. And i picked a dry bean for a week, after dry green peas and dry black-eyed peas, am gonna show case Dry black beans for a week. Black beans are really healthy for both vegetarian and non vegetarian.These tasty and nutritious beans are easily available either as dried ones or in can. However the health benefits of this beans includes protein, fibre, antioxidants and many more micronutrients. Since these beans are high in protein, its definitely a good choice to vegetarian or for dieting people. Taking black beans often in your menu can boost your iron intake. Rich in calcium as much as like other beans, black beans are in high in fiber as well. Vegan Black Bean & Potato Empanadas, Blackbean Empanadas
Empanadas are stuffed bread or pastry which can be baked or fried in many countries. This handmade pies calls for savoury fillings though some make sweet filling empanadas too.Though many non vegetarian versions of empanadas do exists, i seriously want to give a try to a vegan version. Without any fail, i gathered all the ingredients to make an easy dough. Actually empanada's dough calls for egg, butter and my today's empanada dough goes for simple ingredients. This vegan hand pie is a huge hit at home. You can serve this black bean and potato empanadas anytime of the day which makes an excellent meal for both dinner or in lunchbox.

Vegan Blackbean empanadas, Potato & Blackbean empanadas

For Dough:
1cup All purpose flour
1cup Whole wheat flour
1tsp Baking powder
1/2cup Oil
Salt
1/2cup Water

For Stuffing:
2cups Cooked black beans (mashed slightly)
2nos Potatoes (diced)
1no Onion (big & chopped)
2nos Garlic cloves (crushed)
1tsp Cumin powder
1/4tsp Chilly powder
1/2tsp Pepper powder
Salt
Oil

Pre-heat your oven to 350F. Line up  your baking tray with baking paper .

Take the all purpose flour,whole wheat flour,baking powder, salt in a bowl. Add slowly the oil.

Use your finger tips to combine the oil and flour thoroughly, slowly add the water and knead everything as a soft dough.

Meanwhile heat enough oil in a pan, add the crushed garlic, cook for few minutes. Add immediately the chopped onions, saute until the onions turns transculent.

Now add the diced potatoes, cooked black beans, cook for few minutes. Add the spice powders, salt and saute for few seconds.

Sprinkle enough water, cook in medium flame until the potatoes gets well cooked.

Potato & Black beans Empanadas, Vegan Empanadas

Divide the dough into 5-6 balls. Roll each dough as medium sized circles.

Add the filling into each flattened dough, fold each of them and seal well using a fork.

Arrange them on a baking paper and bake for about 20 to 30 minutes until the top turns golden brown.

Cool just a bit on wire rack.

Serve them hot with any dips of choice.

  2. Unfortunately we don't get these in stores, the canned beans are available in gourmet stores and are pretty expensive. But luckily I have some dried beans from US and perhaps will dish out something from your bean recipes.These look too good and tempting.

  9. Black beans are absolutely one of my favorite and this is a lovely dish to make. I am thinking it would work great for lunch boxes as well, if I can refrigerate the empanadas overnight and then bake them in the morning.
