Tuscan Mashed Chickpeas/Cheesy Chickpeas Mash

Do you love chickpeas ashummus very much? or Are you tired of eating the usual hummus?, then its time to give a try to this Tuscan Mashed Chickpeas. Tuscan mashed chickpeas calls for easy ingredients. Its quite a fabulous appetizer to enjoy with some potato chips or tortilla chips before a meal or else to serve as a starter while you have friends around you. An excellent crowd pleaser and definitely a kid's friendly dish as well. You can serve this mashed chickpeas as main course even along with a salad or else with a soup with some grilled meats. A complete and nutritious meal to enjoy without any guilt. Totally gluten free, this mashed chickpeas tastes super delicious, aromatic and quite cheesy as parmesan cheese is added. If you love mashed potatoes, am sure you will go crazy if you taste this mashed chickpeas.

While googling for a different chickpeas based dish, i accidentally saw this mashed chickpeas by Ina Garten. This recipe intrigued me, obviously i want to give a try. And trust me we enjoyed this Tuscan mashed chickpeas as appetizer with some wheat bread slices. Very easy to make, this chickpeas mash is definitely a protein rich dish to give a try without any fail. The addition of minced garlic brings an excellent aroma to this simple mash. Give a try if you are searching for new dish with chickpeas. If you are a hummus lover, trust me you will definitely fell in love with this delicious mashed chickpeas. Am posting this excellent chickpeas mash for this week's blogging marathon as am running with 5 ingredients for 5 weeks as theme. Am showcasing chickpeas as the main ingredient for this week, hence this mashed chickpeas.

Tuscan mashed chickpeas,  Mashed chickpeas

3cups Cooked chickpeas
1/2cup Vegetable stock water
3tbsp Olive oil
1no Tomato (big & diced)
3 Garlic cloves (minced)
1/4cup Grated Parmesan cheese
3tbsp Parsley leaves (chopped)
2tbsp Lemon juice
Salt
Pepper powder (as per need)

Take the chickpeas in the bowl of a food processor, add the vegetable stock and pulse until the chickpeas are coarsely pureed.

Heat the olive oil in a pan, add the tomato and saute for 3 to 4 minutes, until the tomato turns bit mushy.

Add the minced garlic and cook for a minute.

Now add the pureed chickpeas, cook for few minutes, put off the stove.

Add in the Parmesan cheese, chopped parsley, lemon juice, salt, and pepper powder.

Serve with chips or rustic bread slices.
