A crumpet is a griddle cake and these cakes makes an excellent breakfast or snacks depends upon how its served. This English crumpets are generally round in shaped and their shape is obtained by pouring the yeasted batter by a shallow ring in a pan/griddle. This cakes have their characteristic flat top with many small pores, with a chewy and spongy texture. They are cooked in simmer and served immediately to serve warm. These cakes can be cooked slightly undercooked and toasted later to enjoy for breakfast. Often served with butter, you can enjoy thoroughly this spongy crumpets with jam, honey, spread like nutella, caramel etc.English muffins and Crumpets are two different griddle cakes, though they are both round with spongy texture. However crumpets are served whole with butter and jam while English muffins are splited before serving.
Crumpets was challenged by Niv Mani and Aparna for this month's We knead to Bake, a baking event by Aparna of My Diverse Kitchen. As this crumpets calls for yeast, this griddle cakes goes prefectly for this challenge. Since this crumpets calls for shallow rings, i opted for a medium sized tin of tuna fish by opening the both sides to retain the round shaped rings. Obviously you doesnt need to run behind the shallow rings mould. However this tin works awesome and i dished out this fantastic crumpets easily. We enjoyed thoroughly this ultimate spongy pan cakes with butter and honey for our sunday's brunch.
1/2cup Milk
3/4cup Water (lukewarm)
1tsp Sugar
1/2tsp Dry instant yeast
1+ 2/3cups All purpose flour
3/4tsp Salt
1/4tsp Baking powder
1/2tsp Baking soda
Oil(for greasing the rings and cooking)
Take the flour,sugar,yeast and saltin a bowl,add the lukewarm water and stir until the mixture turns as a mooth batter. (The mixture will be similar in texture to a thick pancake batter).
Cover with a kitchen towel and let it in a warm place for 1 hour. The batter will look bubbly.
In a small bowl, stir together the baking powder, baking soda, and water.
Immediately pour this into the batter and stir until it’s completely combined. Set aside for 15 minutes in a warm place.
Meanwhile,grease shallow rings with vegetable oil. Lightly oil a frying pan and place the ring molds in the pan, leaving some space between them.
Spoon the batter into the rings in the pan. Cook the batter in the rings until the surface of the batter looks dry with few holes.
Use a knife to loosen the crumpets from the rings. Remove the rings from the pan using kitchen gloves.
Flip the crumpets using a spatula and cook until golden brown on both sides.
Serve hot from the pan, enjoy warm with salted butter and honey.
