Vegan Rosemary & Potato Dinner Rolls

Since ever i tried baking breads with mashed potatoes, i have completely fallen in love with the soft and spongy texture of each bakes i have baked out of mashed potatoes. Few days back, i had some leftover cooked potatoes sitting in my fridge and i tried this ultimate super spongy, completely vegan and mildly flavoured dinner rolls with rosemary. Trust me this dinner rolls came out absolutely spongy and one can have these herbed potato dinner rolls with anything, we had these rolls with cream cheese for our snacks and with a bowl of soup for our dinner along with grilled chicken thighs.

Rosemary & Potato Dinner Rolls

Mashed potatoes replace very well eggs in breads or cakes, they gives an excellent texture to bread or cakes. I have tried couple of bakes with cooked and mashed potatoes and everytime they turned just prefect, definitely a big hit at home. Especially in yeasted bread or dinner rolls, potatoes gives fabulous airy and soft crumb with beautiful crust as well. Coming to this dinner rolls, this cuties are egg free, butter free and completely vegan. Obviously no need to hesitate a second to give a try to this vegan dinner rolls if you are planning to make some dinner rolls soon.These dinner rolls goes to this month's blogging marathon as we are running Megamarathon during this whole month of April with baking as theme.


3 Cooked Potato (medium sized & peeled)
2 Cups  Bread flour
1cup Whole wheat flour
1+1/2tsp Instant yeast
1tsp Sugar
1+1/2tsp Salt
1tbsp Rosemary
1tsp Chilly flakes
2tbsp Flaxseed
2tbsp Olive oil
Luke warm water (as per need)

Mash the cooked potato completely.

Now add the flours,sugar, flaxseed,rosemary,chilly flakes, yeast and salt to the mashed potatoes and start kneading to make a soft dough, add water and oil slowly and knead the dough.

Knead well for 5-8 minutes to get a smooth dough. Let the dough rest in a greased bowl for an hour or unitl it doubles.

After an hour, knead the dough,dust with all purpose flour and divide them 9-10 medium sized balls.

Knead the balls one by one, flatten them with your palms and roll them as round balls.

Arrange the rolls in a greased square baking tray.Keep aside for half an hour.

Brush the dinner rolls with water.

Preheat the oven to 350F.

Bake the dinner rolls for 25-30minutes until the crust turns golden brown..

Enjoy this dinner rolls with your favourite spread.

  2. Dinner rolls look very soft. Recently even I baked a bread with mashed potatoes and it was extra soft. Never new potatoes could give such soft bread.

  9. Keep learning something everyday. I have not used potato in baking as I do not want to buy processed potato flour. This sounds like a great option. Will try it.
